Caribbean Rum Punch: A Tropical Cocktail Celebration

Caribbean Rum Punch Recipe (Batch Cocktail)

This rum punch serves four in about 10 minutes — no blender, no special equipment, just a pitcher and a stir. It uses both white and dark rum with three fresh citrus juices and a splash of club soda, so the flavor is bright and not overly sweet. It’s a solid batch cocktail for a backyard gathering, and the base (without the rum) works well as a mocktail for anyone not drinking.

The short version of why this works

Two things matter here. First, using both white and dark rum instead of just one gives the drink more depth without adding complexity to the prep — white rum keeps it light, dark rum adds a little weight and a hint of molasses that stops it from tasting like straight juice. Second, the club soda goes in last, per glass, not into the pitcher. If you add it to the whole batch ahead of time, it goes flat fast and you lose the fizz that keeps this drink from feeling heavy. Stir gently after adding the soda so you don’t knock out all the carbonation.

About the ingredients

  • Grenadine: Most store-bought grenadine is corn syrup and red dye — it works fine here for color and sweetness, but if you want actual pomegranate flavor, look for a brand that lists pomegranate juice as the first ingredient, or use a small splash of real pomegranate juice instead.
  • Dark rum: Any standard dark or aged rum works. You don’t need anything expensive. Blackstrap rum is too intense for this ratio — stick with a standard dark.
  • Club soda: Plain club soda only. Tonic water has its own bitter flavor that will fight the citrus. Sparkling water works as a substitute if that’s what you have.
  • Mocktail swap: Leave out both rums entirely and add an extra half cup of pineapple juice plus a small splash of coconut water. It holds up well and kids won’t feel like they’re missing out.

What can go wrong

  • It tastes too sweet: Grenadine and pineapple juice are both sweet, and some brands vary a lot. If the punch tastes cloying, squeeze in more lime juice — a teaspoon at a time — until it balances out. Don’t add more club soda to fix sweetness; it just dilutes everything.
  • The rum flavor is too sharp: This usually means the juices weren’t quite enough to balance the alcohol. Add another quarter cup of orange juice and stir before serving. Chilling the pitcher for 15 minutes before pouring also softens the alcohol edge.
  • It tastes flat even with fresh soda: The pitcher mixture was probably too warm when you poured it. Cold liquid holds carbonation better. Make sure the juice-rum base is well chilled before you add the ice and soda.
  • The color looks muddy instead of bright: This happens when the grenadine sinks and isn’t fully stirred in, or when dark rum is added last and streaks through. Add grenadine first, then the rums, then the juices, and stir thoroughly before pouring.
  • Ice melts too fast and waters it down: Use the largest ice cubes you have, or fill a zip-lock bag with ice and set the whole pitcher in a bowl of ice rather than adding more cubes directly to the glasses. Skip the garnish — not worth the extra dish.

Storage and reheating

Store the rum-and-juice base (without club soda) in a sealed pitcher or jar in the fridge for up to 3 days. The citrus flavor fades a little after day two, so it’s best fresh. Do not add the club soda until you’re ready to serve — it will go completely flat overnight. This drink doesn’t freeze well; the juice separates and the texture is off once thawed. There’s no reheating involved, but if the base has been sitting in the fridge, give it a good stir before pouring since the grenadine tends to settle at the bottom.

Equipment

  • Large pitcher (at least 1.5 quart / 1.5 litre)
  • Citrus juicer or reamer
  • Jigger or liquid measuring cup
  • Long-handled bar spoon or wooden spoon
  • 4 tall glasses (12 oz / 350ml)

Ingredients

  • 1 cup white rum 240ml, preferably Caribbean
  • ½ cup dark rum 120ml, for depth of flavour
  • 1 cup pineapple juice 240ml, freshly squeezed if possible
  • 1 cup orange juice 240ml, freshly squeezed
  • ¼ cup lime juice 60ml, freshly squeezed, about 2-3 limes
  • 2 tablespoons grenadine 30ml, for a hint of sweetness and colour
  • 1 cup club soda 240ml, to add a refreshing fizz
  • 2 ½ cups ice cubes for serving

Instructions

  • In a large pitcher, combine the white rum, dark rum, pineapple juice, orange juice, lime juice, and grenadine. Stir well to mix the flavors thoroughly.
1 cup white rum, 1/2 cup dark rum, 1 cup pineapple juice, 1 cup orange juice, 1/4 cup lime juice, 2 tablespoons grenadine
  • Fill four glasses with ice cubes, ideally large cubes that melt slowly to keep the punch cold without diluting the flavors.
    2 1/2 cups ice cubes
  • Pour the rum mixture over the ice-filled glasses, leaving room at the top for the club soda.
  • Top each glass with about 1/4 cup (60ml) of club soda, then gently stir once or twice to combine without knocking out the carbonation. Taste and adjust for sweetness or rum balance if needed.
    1 cup club soda
  • Garnish each glass with an orange slice, a pineapple wedge, or a lime wheel. Serve immediately.

Notes

Storage: Keep the rum-and-juice base (without club soda) in a sealed pitcher in the fridge for up to 3 days. Best within the first 24 hours as the citrus flavour fades after day two.
Make-Ahead: Mix all ingredients except club soda the morning of your event. Add soda per glass when serving.
Substitution: Replace both rums with extra pineapple juice and a splash of coconut water for a non-alcoholic version.
Pro Tip: Use large ice cubes — they melt slower than standard cubes, keeping the punch cold without diluting the flavour as quickly.
Do Not Freeze: The juice separates once thawed and the texture is off. This is a fresh drink only.

Common questions

Can I make this ahead of time for a party?

Yes — mix the rum and all three juices with the grenadine up to a day ahead and keep it covered in the fridge. Add the club soda only when you’re ready to pour, otherwise it goes flat and the drink loses its lightness.

Can kids drink this, or is there a version without alcohol?

Leave out both rums and replace with an extra half cup of pineapple juice and a splash of coconut water for a non-alcoholic version that still tastes tropical. It works well served alongside the adult version at the same gathering since the base ingredients are identical.

Do I have to use freshly squeezed juice, or does bottled work?

Bottled juice works fine and is what most people will use. Fresh-squeezed orange and lime juice do taste noticeably brighter, especially the lime, but the difference is small enough that it’s not worth the effort unless you already have the fruit on hand.
