A Horse’s Neck is two ounces of bourbon or brandy topped with ginger ale, finished with a long curl of lemon peel that runs the inside of the glass. It takes five minutes, uses ingredients most people already have, and the no-alcohol version — just ginger ale and the lemon peel — is genuinely good on its own, which makes it easy to serve at a table with mixed drinkers.

Before you start

The one technique worth getting right is the lemon peel. You want a single, unbroken strip long enough to spiral around the inside of a highball glass — roughly the full length of the lemon. Use a vegetable peeler and work slowly in a tight spiral from top to bottom, keeping steady pressure. Thin is better: thick peel has too much white pith, which tastes bitter and clouds the drink slightly. Once the peel is in the glass, it stays put when you add ice, and the ice holds it against the glass wall so it doesn’t just sink to the bottom.

Substitutions that actually work

  • Ginger beer instead of ginger ale: Works well and gives a noticeably spicier, less sweet result. Good if you find standard ginger ale too sugary. Use the same 5 oz measure.
  • Brandy or cognac instead of bourbon: Both work. Cognac is smoother and slightly sweeter; rye whiskey goes drier and spicier. The ratio stays the same either way.
  • Non-alcoholic version: Skip the spirit entirely and just use ginger ale or ginger beer with the lemon peel and a dash of bitters. The bitters are not optional here — without the spirit, they do the work of adding depth. Angostura bitters contain a very small amount of alcohol, so if that matters for your household, leave them out too and add a small squeeze of lemon juice instead.

Troubleshooting

  • The lemon peel keeps breaking: The lemon is probably cold and stiff straight from the fridge. Let it sit at room temperature for 10 minutes before peeling — the skin is more flexible and less likely to snap mid-spiral.
  • The drink tastes flat: You poured the ginger ale too fast or stirred too aggressively. Pour slowly down the side of the glass and stir just once or twice. The carbonation is doing real work here.
  • Too sweet: Switch to ginger beer, or use a bourbon with a higher rye content, which reads drier. Skip the garnish squeeze — pressing the peel releases oils but also a little juice, which adds sweetness.
  • The peel sinks and bunches at the bottom: Add the peel before the ice, not after. The ice cubes lock it against the glass wall as you stack them in.
  • Bitters overpowering everything: One dash is genuinely one dash — tip the bottle quickly and right it again. If you’ve added too much, top up with a splash more ginger ale to balance it out.

Keeping and reheating

Mix this drink to order — that’s the only real approach. Once ginger ale is poured, it starts losing carbonation immediately, and a flat Horse’s Neck is not worth drinking. If you’re making several at once for a group, measure out the bourbon portions in advance and keep them in a small pitcher in the fridge, then pour and top each glass individually as people are ready. The lemon peels can be cut up to two hours ahead and stored in a small bowl of cold water in the fridge to keep them pliable — skip storing them dry, they’ll curl up and stiffen.

Can kids drink a Horse’s Neck?

Yes, with one easy adjustment: leave out the bourbon or brandy entirely and serve it as just ginger ale with the lemon peel. It looks identical in the glass, which matters more than most adults expect, and the non-alcoholic version is genuinely refreshing on its own.

Does the brand of ginger ale actually matter?

It does make a noticeable difference. Mass-market ginger ales tend to be very sweet with mild ginger flavor, which can make the drink taste more like a soda than a cocktail.
