Crafting the Perfect Classic Daiquiri A Caribbean Cocktail

Three ingredients, ten minutes, one glass. A classic daiquiri is white rum, fresh lime juice, and simple syrup — shaken hard and served cold. If you already have simple syrup in the fridge, this is genuinely the fastest quality cocktail you can make.

What makes this version work

Two things matter here. First, squeeze the lime fresh — bottled juice is noticeably more bitter and flat, and with only three ingredients there is nowhere to hide it. One medium lime gives you roughly the 1 oz the recipe calls for. Second, shake longer than feels necessary. A full 10–15 seconds against a full shaker of ice chills the drink properly and dilutes it just enough to soften the rum’s edge. Under-shaking leaves it harsh. The ratio of 2 oz rum to 1 oz lime to 0.75 oz simple syrup is deliberately tart-forward; if your limes are unusually sour, bump the syrup to 1 oz rather than adding more rum.

If something goes sideways

  • Drink tastes too sharp or boozy: The shaker probably wasn’t cold enough or you didn’t shake long enough. Ice that’s been sitting in a warm shaker melts fast without chilling. Start with ice straight from the freezer and shake the full 15 seconds.
  • Too sweet, not enough brightness: Pull back the simple syrup to 0.5 oz next round, or add a few extra drops of lime juice. Lime size and ripeness vary a lot — taste before you pour.
  • Drink is watery: You waited too long to strain it. Once shaking stops, strain immediately. Every extra second the liquid sits on ice dilutes it further.
  • Simple syrup has crystallized or gone cloudy: It’s past its prime. Fresh 1:1 simple syrup keeps about two weeks refrigerated — make a new batch before mixing.
  • Glass isn’t cold enough and the drink warms quickly: Chill the glass with ice water for at least 2 minutes, not just a quick rinse. A properly chilled coupe or cocktail glass makes a real difference in how long the drink stays cold.

Storage and reheating

Simple syrup is the one component worth making in bulk. A standard batch — 1 cup sugar dissolved in 1 cup water — keeps in a sealed jar in the fridge for up to two weeks and covers roughly 20 daiquiris, so there’s no reason to make it one drink at a time. If you’re mixing for a group, you can pre-batch the rum and simple syrup together in a jar and refrigerate it for up to three days; add the lime juice and shake to order, since lime juice oxidizes and goes flat within a day. Skip the garnish — not worth the extra dish. The pre-batched base (rum plus syrup, no lime) can also be frozen in an ice cube tray; pop out a cube or two, let them thaw in the shaker, add fresh lime, and shake as normal.

  • 1 oz fresh lime juice from one medium lime
  • ¾ oz simple syrup 1:1 ratio — equal parts sugar and water, dissolved; see Notes for batch instructions

For Shaking

  • ice cubes enough to fill the cocktail shaker

Garnish

  • 1 lime wheel for garnish

Instructions
 

  • Fill your coupe or cocktail glass with ice water and set it aside while you prepare the drink. This chills the glass so your daiquiri stays cold from the first sip to the last.

  • Fill the shaker with ice cubes and securely close the lid.

  • Shake vigorously for about 10-15 seconds until the outside of the shaker feels cold to the touch.
  • Discard the ice water from the chilled glass and strain the daiquiri into the glass.
  • Garnish with a thin lime wheel on the rim of the glass, if desired. A small expression of lime oil from the peel adds a subtle citrus aroma.

Make-Ahead: Pre-batch rum and simple syrup together in a sealed jar and refrigerate for up to 3 days. Add fresh lime juice and shake to order — lime juice oxidises and goes flat within a day.

FAQ

Can I use any white rum, or does the brand matter?

A mid-range white rum works perfectly well here. You don’t need to spend a lot, but avoid the very cheapest bottles — with only three ingredients, a harsh rum will show. Brands like Bacardi Superior, Flor de Caña Extra Dry, or Banks 5 Island are reliable and easy to find.

Do I have to use simple syrup, or can I just use regular sugar?

Simple syrup mixes in evenly; granulated sugar doesn’t fully dissolve in a cold shaker and leaves a gritty texture at the bottom of the glass. If you only have sugar on hand, dissolve it in a small amount of warm water first before adding it to the shaker.

What glass should I use if I don’t have a coupe or cocktail glass?

Any stemmed glass or even a small wine glass works fine. The stem matters mainly because it keeps your hand from warming the drink — a regular tumbler is fine too, just drink it quickly.

Can I make a pitcher of daiquiris ahead of a party?

Yes, but leave the lime juice out until close to serving time. Mix the rum and simple syrup in advance, refrigerate, then add fresh lime juice and stir well right before guests arrive. Shake individual portions over ice if you want proper dilution and chill.

Is there a non-alcoholic version I can make with this recipe?

Replace the rum with a combination of white grape juice and a small splash of coconut water to approximate the body. The lime and simple syrup ratios stay the same — shake over ice and strain as normal.

My shaker is leaking when I shake — what am I doing wrong?

The seal is almost always the problem, not the shaker itself. Make sure the lid is pressed down firmly before you start, and hold both ends of the shaker while you shake. If you’re using a two-piece Boston shaker, tap the top piece at a slight angle to create a tight seal.
