This is a straightforward homemade horchata — rice and cinnamon soaked overnight, blended, strained, and sweetened with milk and vanilla. The hands-on time is about 15 minutes; the overnight soak does the real work while you sleep. If you want a cold, creamy drink ready for dinner tomorrow without buying anything unusual, this is it.

Ingredient notes

  • Mexican cinnamon (canela): Softer and more loosely wound than the Ceylon or cassia sticks you might already have. It infuses faster and has a lighter, slightly floral flavor. Worth seeking out at a Latin grocery, but regular cinnamon sticks will still produce a good drink.
  • Mexican vanilla extract: Slightly sweeter and less sharp than standard vanilla. Use whatever pure vanilla extract you have — just avoid imitation, which can taste medicinal once the drink is cold.
  • Long-grain white rice: Do not swap in jasmine or basmati. Their stronger aromas compete with the cinnamon. Plain long-grain white rice gives a clean, neutral base.
  • Milk options: Whole milk makes the creamiest result. Oat milk is the best dairy-free swap — it blends into the drink smoothly without adding a strong flavor of its own. Coconut milk works but adds noticeable coconut flavor, so go in with that expectation.

The short version of why this works

Two things actually matter here. First, the overnight soak: dry rice is too hard to blend into anything smooth, and a short soak won’t cut it — 10 to 12 hours is what gets the grains soft enough to break down fully in a home blender. Second, straining thoroughly. Even after two minutes of blending, there will be fine rice particles in the liquid. If you rush the straining or skip squeezing the solids, you end up with a gritty drink that separates aggressively in the glass. Press the solids firmly against the strainer and take your time — that step is the difference between a smooth, milky drink and one that feels like diluted rice porridge.

Common problems and fixes

  • Drink tastes flat or bland: Sugar alone won’t fix this — the small amount of sea salt in the recipe is doing real work. If your horchata tastes dull, add salt in tiny pinches and stir before reaching for more sugar.
  • Too thick after chilling: Horchata thickens as it sits cold. Stir in a few tablespoons of cold water before serving and taste again — it usually just needs loosening, not more sweetener.
  • Gritty texture in the glass: Your strainer mesh was too coarse, or you didn’t press the solids. Pour the batch through a second time using cheesecloth or a clean flour-sack towel layered inside the strainer.
  • Cinnamon flavor is barely there: The stick may have been old and dried out. For the next batch, lightly crush the cinnamon stick before adding it to the soak — skip the garnish of a fresh stick on the glass, not worth the extra dish — and the flavor will come through much more clearly.
  • Drink separates almost immediately in the glass: This is normal and not a sign something went wrong. The rice solids that make it through straining will settle. Stir the pitcher before every pour and keep a long spoon nearby at the table.

Ingredients
 
 

  • 1 cup long-grain white rice preferably organic, rinsed thoroughly
  • 2 cups water filtered, for soaking
  • 1 stick cinnamon Mexican canela preferred
  • 4 cups cold water for blending
  • 1 cup whole milk can substitute with almond or oat milk for dairy-free
  • ¾ cup granulated sugar adjust based on sweetness preference
  • 1 teaspoon pure vanilla extract preferably Mexican vanilla
  • ⅛ teaspoon sea salt to enhance flavor balance

Instructions
 

  • Rinse the rice under cool running water until the water runs clear. This removes excess starch and prevents cloudiness in the horchata.
  • In a large bowl, combine the rinsed rice, 2 cups of water, and the cinnamon stick. Cover and let soak at room temperature for 10 to 12 hours or overnight. The rice should soften, and the cinnamon will infuse the water with its aromatic oils.
  • Remove the cinnamon stick, then pour the soaked rice and water mixture into a blender. Add 4 cups of cold fresh water. Blend on high speed for 2–3 minutes or until the rice is finely ground and the mixture looks milky.
  • Strain the mixture through a fine mesh strainer or cheesecloth into a large pitcher. Press or squeeze to extract as much liquid as possible. Discard the solids.
  • Stir in the milk, sugar, vanilla extract, and sea salt. Mix until the sugar is completely dissolved. Taste and adjust sweetness if desired.
  • Chill in the refrigerator for at least 30 minutes before serving. Serve over plenty of ice and stir well before pouring, as natural settling will occur.

  • For a nuttier flavor, add 1/4 cup of soaked almonds or blanched almonds to the blender step.
  • To make vegan horchata, replace milk with oat, almond, or coconut milk and use coconut sugar or agave syrup for sweetening.

Can I skip the overnight soak and make this same-day?

Not really — a short soak produces a noticeably grainier drink. If you’re in a pinch, soak for a minimum of 4 hours in warm (not hot) water, but the texture and flavor won’t be as smooth or developed as a full overnight soak.

How long does homemade horchata keep in the fridge?

Up to 3 days, tightly covered. After that the flavor starts to go stale and the milk component can sour. Give it a good stir each time you pour, since settling happens quickly.

My blender isn’t very powerful — will this still work?

Yes, but blend in two batches rather than one full load, and run it longer — closer to 3 minutes per batch. A less powerful motor needs more time to break down the softened rice, and overloading it just means uneven grinding.
