The Hemingway Daiquiri is a shaken cocktail built on white rum, fresh grapefruit juice, lime juice, and maraschino liqueur — tarter and drier than a standard daiquiri, with more going on. It takes five minutes and uses one shaker. That’s genuinely the whole pitch.

The short version of why this works

Two things matter here. First, fresh juice — both grapefruit and lime. Bottled juice is flatter and often bitter in the wrong way; fresh juice gives you brightness that actually holds up against the rum. Second, shaking hard for a full 15 seconds. That’s not just about chilling the drink — it also aerates it slightly and dilutes it just enough to pull the flavors together. Under-shake it and the maraschino sits heavy. Get both of those right and the drink balances itself.

Ingredient notes

  • Maraschino liqueur: This is not the syrup from a jar of cocktail cherries. It’s a clear, dry cherry liqueur — Luxardo is the most widely available brand. There’s no real substitute that gives the same result, so it’s worth buying a bottle. It lasts a long time and works in other cocktails.
  • White rum: Havana Club or Bacardi both work well. Avoid anything labeled “spiced” — the vanilla and cinnamon notes will fight the citrus.
  • Simple syrup: The recipe calls for 7 ml, which is a small amount. Start there, taste, and add a touch more if the grapefruit is particularly tart that day. Grapefruits vary a lot in sweetness depending on the season.

Make-ahead notes

You can pre-mix the rum, grapefruit juice, lime juice, and maraschino up to 4 hours ahead — combine them in a small jar or pitcher and keep it in the fridge. Don’t add the simple syrup until you’re ready to shake, since the acid in the citrus can make it taste slightly different if it sits too long with the sweetener. When you’re ready to serve, just pour the pre-mixed batch into a shaker with ice and shake as normal. This makes it easy to batch for two or three people without measuring everything twice.

What can go wrong

  • The drink tastes harsh and boozy: You didn’t shake long enough. A short shake leaves the rum unintegrated. Go the full 15 seconds — the shaker should feel very cold in your hands before you stop.
  • It’s too bitter: Your grapefruit was on the bitter side, or you accidentally used too much. Pull back the grapefruit juice by 5–10 ml and add a small extra measure of simple syrup to compensate.
  • It’s too sweet and flat: The maraschino is doing too much work, usually because the lime or grapefruit juice was under-measured. Citrus is what keeps the drink from tasting like candy — measure it accurately rather than eyeballing.
  • Ice shards in the glass: Strain through a fine mesh strainer, not just the built-in cocktail shaker strainer. Skip the garnish — not worth the extra dish — and just serve it clean in a chilled glass.
  • The glass isn’t cold and the drink warms up fast: Put your coupe or martini glass in the freezer for 5 minutes before you start, or fill it with ice water while you measure ingredients, then dump it right before you strain.

Ingredients
 
 

  • 2 oz white rum 60ml; use a quality white rum such as Havana Club or Bacardi
  • 1 oz fresh grapefruit juice 30ml; freshly squeezed for the best flavour
  • ½ oz fresh lime juice 15ml
  • ½ oz maraschino liqueur 15ml; such as Luxardo
  • ¼ oz simple syrup 7ml; adjust to taste
  • 8 oz ice cubes enough to fill the shaker about two-thirds full
  • 1 piece lime wheel or maraschino cherry for garnish

Instructions
 

  • In a cocktail shaker, combine the white rum, fresh grapefruit juice, lime juice, maraschino liqueur, and simple syrup.

  • Add ice cubes to the shaker and shake vigorously for about 15 seconds to chill and blend the ingredients thoroughly.

  • Double-strain the mixture through a Hawthorne strainer and fine mesh strainer into a chilled coupe or martini glass to catch any ice shards and pulp.
  • Garnish with a lime wheel on the rim or drop a maraschino cherry into the glass. Serve immediately while the drink is ice-cold.

Pro Tip: Chill your coupe or martini glass in the freezer for at least 10 minutes before serving — a warm glass will raise the drink’s temperature noticeably within the first few sips.
Batching: To make 4 servings, multiply all liquid ingredients by 4, combine in a pitcher (without syrup), and refrigerate. Shake individual portions with ice and syrup when ready to serve.

Can I use bottled grapefruit juice instead of fresh?

It will work in a pinch, but the drink won’t be as bright. Bottled grapefruit juice tends to be more bitter and less vibrant, and that difference is noticeable in a short cocktail with only a few ingredients.

Do I have to use maraschino liqueur, or can I skip it?

You can skip it, but you’ll have a different drink — closer to a standard daiquiri. The maraschino adds a dry, slightly nutty depth that’s hard to replicate; without it, the cocktail tastes thinner.
