The Royal Hawaiian is a gin cocktail with fresh pineapple juice, lemon, and orgeat — it takes five minutes and uses four ingredients most well-stocked home bars already have. It’s sweet enough that people who don’t usually like gin tend to enjoy it, which makes it a solid choice when you’re mixing drinks for a crowd with different tastes. The mocktail version works just as well, so nobody gets left out.

What makes this version work

Two things actually matter here. First, fresh juice — both pineapple and lemon. Bottled pineapple juice is noticeably flatter and sweeter, and it throws off the balance with the orgeat. A small hand juicer and half a lemon takes thirty seconds. Second, the double strain. Running the shaken cocktail through both a Hawthorne strainer and a fine mesh strainer removes the pulp and ice chips that would otherwise make the drink cloudy and slightly watery as they melt. It’s one extra step and it’s the difference between a drink that looks sharp in the glass and one that doesn’t.

Troubleshooting

  • Drink tastes too sweet: Orgeat is thick and very sweet — measure it carefully. A heavy pour throws the whole cocktail off. If it’s already made and too sweet, a few extra drops of fresh lemon juice will pull it back without watering it down.
  • Drink tastes flat or thin: You probably didn’t shake long enough. Fifteen to twenty seconds of hard shaking is what chills and aerates the cocktail properly. A half-hearted shake gives you a lukewarm, under-diluted result.
  • Gin flavor is too sharp or boozy: The gin-forward edge usually means the pineapple juice was measured short. Make sure you’re using a full ounce. A citrus-forward London dry gin (rather than a heavily juniper one) also softens the overall profile considerably.
  • Glass isn’t cold enough: A warm coupe makes a cold cocktail go tepid fast. Fill the glass with ice water for two minutes while you prep, then dump it right before you pour. Skip the garnish — not worth the extra dish — unless you’re serving guests and want the visual.
  • Mocktail version tastes one-dimensional: Without the gin’s botanical backbone, the drink can taste like sweet pineapple lemonade. Add a small splash of white grape juice or a drop of pure almond extract to give it more depth.

Smart swaps

  • Orgeat: This is the one ingredient worth tracking down rather than substituting. It’s an almond syrup — not amaretto, not almond extract, not simple syrup. Most grocery stores carry it in the cocktail mixer aisle. If you genuinely can’t find it, a small amount of almond milk blended with simple syrup gets you partway there, but the texture won’t be the same.
  • London dry gin: Any standard London dry works. You don’t need a premium bottle for this — the pineapple and orgeat are doing a lot of the flavor work. Avoid heavily floral or cucumber gins, which can clash with the pineapple.
  • Fresh pineapple juice: If you’re juicing your own, a blender and a fine strainer works fine — no juicer needed. Canned 100% pineapple juice (not from concentrate) is an acceptable backup in a pinch, but reduce the orgeat slightly since canned juice tends to run sweeter.

  • 1 dash orange bitters optional, adds citrus complexity — omit if unavailable

  • 1 edible orchid or pineapple wedge for garnish

Instructions
 

  • Add 2 oz (60ml) gin, 1 oz (30ml) fresh pineapple juice, 0.5 oz (15ml) lemon juice, 0.5 oz (15ml) orgeat syrup, and a dash of orange bitters (if using) to a cocktail shaker. Fill with ice and shake vigorously for 15–20 seconds until the outside of the shaker is ice cold.

  • Double strain into a chilled coupe or martini glass (place the glass in the freezer for 10 minutes before serving, or fill with ice water while you shake) using a Hawthorne strainer over a fine mesh strainer to catch all pulp and ice chips.
  • Garnish with an edible orchid or a fresh pineapple wedge on the rim for an elegant tropical flair.

Substitutions: For a non-alcoholic version, replace gin with Seedlip Grove 42 or a quality non-alcoholic spirit and omit the bitters. If you can’t find orgeat, use 0.25 oz amaretto plus 0.25 oz simple syrup — the almond note will be less nuanced but the drink still works.
