The Coconut Breeze is a shaken cocktail built on light rum, coconut cream, pineapple juice, and lime — ready in 10 minutes with no special equipment beyond a cocktail shaker. It makes two drinks, the flavors are well-balanced rather than cloyingly sweet, and the whole thing comes together faster than a trip to the blender.

Why this recipe works

Two things make this cocktail work. First, shaking over crushed ice for a full 15 seconds does more than chill the drink — it slightly aerates the coconut cream, giving the finished cocktail a lighter texture than you’d expect from a cream-based drink. Second, the lime juice is doing real structural work here: without it, the coconut cream and pineapple juice would taste flat and one-note. The small amount of simple syrup lets you fine-tune sweetness after you taste, which matters because pineapple juice varies a lot in tartness depending on the brand or whether it’s fresh-pressed.

Mistakes to avoid

  • Using cream of coconut instead of coconut cream. These are not the same thing. Cream of coconut (like Coco López) is heavily sweetened and will make the drink syrupy. Coconut cream is thick, unsweetened, and found in the canned goods aisle near the coconut milk. Check the label before you buy.
  • Skipping the chilled glass. A warm glass heats the drink fast. Stick two glasses in the freezer for 5 minutes before you start mixing — it takes almost no effort and keeps the cocktail cold through the second pour.
  • Not shaking hard enough. A gentle swirl won’t cut it. The coconut cream needs real agitation to fully incorporate with the juice and rum. Shake firmly until the outside of the shaker is frosty and almost uncomfortable to hold.
  • Adding too much simple syrup upfront. Start with the 5 ml called for, then taste before you strain. Pineapple juice from a carton is often sweeter than fresh-pressed, so you may not need all of it — or any.
  • Pouring without straining. The crushed ice used for shaking has already done its job and diluted slightly. Strain into fresh ice in the glass so the drink stays cold without getting watery.

Instructions
 

  • In a cocktail shaker, combine the light rum, coconut cream, pineapple juice, lime juice, and simple syrup. Add a handful of crushed ice.
  • Shake thoroughly for about 15 seconds or until the exterior of the shaker feels cold and frosted. The mixture should be well-combined, and the cream should froth slightly.
  • Strain the mixture into two chilled glasses over fresh ice.
  • Garnish with a slice of fresh pineapple and a sprig of mint for an aromatic touch.

Do I need a cocktail shaker, or can I use something else?

A proper cocktail shaker is the easiest option, but a large mason jar with a tight-fitting lid works fine. Just make sure the lid is secure before you shake — coconut cream and pineapple juice will make a significant mess if it comes loose.

Can I make this without alcohol?

Yes — replace the rum with an equal amount of coconut water or additional pineapple juice. The drink will be lighter and less rich, but the flavor combination still holds up well.

Can I make a big batch ahead of time for a party?

You can mix the rum, coconut cream, pineapple juice, lime juice, and simple syrup together in a pitcher up to a few hours ahead and keep it refrigerated. Shake each portion individually over ice right before serving — the coconut cream separates as it sits and needs fresh agitation to recombine properly.

What kind of light rum should I use?

Any widely available light rum works — Bacardi Silver or Mount Gay Eclipse are easy to find and both perform well here. You don’t need to spend a lot; the coconut and pineapple flavors are prominent enough that a mid-range bottle is plenty.

My coconut cream is solid in the can. Is that okay?

Completely normal — coconut cream solidifies when cold. Spoon it into a small bowl and stir it briefly, or sit the unopened can in warm water for a few minutes until it loosens. Measure it once it’s smooth so you get an accurate amount.

Do I really need the mint and pineapple garnish?

Skip the garnish — not worth the extra dish. The drink looks good in a chilled glass on its own, and the mint doesn’t add enough flavor to justify hunting down a fresh bunch if you don’t already have one.
