This is a shaken cocktail built on white rum, pineapple juice, coconut cream, lime juice, simple syrup, and a dash of Angostura bitters — ready in 10 minutes with no special equipment beyond a shaker and a strainer. The honest reason to make it: it uses pantry-friendly ingredients in small amounts, which means a single bottle of rum and a can of coconut cream can stretch across a whole batch of drinks without waste.

The technique that matters

Shaking hard and long enough is the only technique here that actually changes the drink. Fifteen seconds of vigorous shaking does two things: it chills the mixture fast and breaks the coconut cream into the liquid so you get a lightly frothy, even texture instead of a greasy film on top. A gentle shake leaves the coconut cream clumped and the drink undercooled. Use a full cup of ice in the shaker — more ice means faster chilling and less dilution, not more. Straining into a glass that’s been sitting in the freezer for five minutes keeps everything cold longer, which matters because this drink is noticeably better at the right temperature.

Leftovers and make-ahead

You can mix a batch of the base — rum, pineapple juice, coconut cream, lime juice, and simple syrup — up to 48 hours ahead and keep it in a sealed jar or pitcher in the fridge. Leave out the bitters until you’re ready to serve; they can turn slightly medicinal after a day in the mix. Give the jar a good shake before pouring because the coconut cream will settle. For larger gatherings, this base scales up cleanly: multiply every ingredient by the number of servings, batch it in a pitcher, and shake individual portions over ice to order. Skip the garnish — not worth the extra dish when you’re making six at once. The base does not freeze well; coconut cream separates on thawing and won’t re-emulsify properly even with shaking.

What can go wrong

  • Drink tastes flat and watery: The shaker didn’t have enough ice, or you shook too slowly. Pack the shaker full and shake hard. Serve immediately after straining — this drink sits and dilutes faster than spirit-forward cocktails.
  • Coconut cream clogs the strainer: Coconut cream from a cold can is thick and will block a fine-mesh strainer. Use a standard cocktail strainer, not a fine-mesh one, and shake the can well before measuring.
  • Too sweet, no brightness: Pineapple juice varies a lot by brand — some are much sweeter than others. If the drink tastes cloying, add an extra 5 ml of lime juice rather than reducing the syrup, which keeps the body of the drink intact.
  • Bitters flavor is overwhelming: One dash is genuinely one dash — tip the bottle quickly and right it. If you free-poured and overdid it, you can’t fix the glass, but you’ve learned the bottle is faster than it looks. Measure with a dropper next time.
  • Coconut cream and juice separate in the glass quickly: This happens when the glass isn’t cold. Chill your glass in the freezer for at least five minutes, or fill it with ice water for two minutes and dump it before straining the drink in.

  • 60 ml White rum Preferably from a Caribbean brand
  • 30 ml Pineapple juice Freshly squeezed for best flavor

  • 1 dash Angostura bitters

Instructions
 

  • Fill a cocktail shaker with ice.
  • Add the white rum, pineapple juice, coconut cream, lime juice, simple syrup, and Angostura bitters to the shaker.
  • Shake vigorously for about 15 seconds until the mixture is well-chilled and slightly frothy.
  • Strain the mixture into a chilled cocktail glass filled with ice.
  • Garnish with a sprinkle of freshly grated nutmeg, a slice of pineapple, and a maraschino cherry.

Notes

To add a fruity twist, consider using flavored syrups like mango or passionfruit. If you prefer a lighter drink, reduce the use of simple syrup. Experimenting with different brands of rum can also subtly alter the flavor.

Common questions

Can I make this without alcohol?

Yes — replace the white rum with an equal amount of coconut water or white grape juice. The drink will be lighter and less complex, but the pineapple, coconut, and lime flavors still come through clearly.

Can I use canned coconut milk instead of coconut cream?

You can, but the drink will be thinner and less rich. Coconut cream has a higher fat content than coconut milk, which is what gives this cocktail its body. If coconut milk is all you have, use the thick layer from the top of an unshaken can.

Do I need freshly squeezed lime juice, or will bottled work?

Freshly squeezed lime juice makes a real difference here because bottled juice often has a slightly cooked, dull flavor that flattens the drink. This recipe only calls for 15 ml — about half a lime — so it’s worth squeezing fresh.

What if I don’t have Angostura bitters?

You can leave them out and the drink is still good. The bitters add a faint spiced warmth that rounds out the sweetness, but the cocktail works fine without them — it just tastes a little more straightforwardly fruity.
