Amazing Indian Butter Chicken Over Basmati Rice

- Sauce Ingredients
- 2 tablespoons of peanut oil
- 2 shallots, finely chopped
- 1/2 white onion, finely chopped
- 1/4 cup of butter
- 1 tablespoon of lemon juice
- 1 tablespoon of ginger paste
- 1 tablespoon of garlic paste
- 3 teaspoons of garam masala
- 2 teaspoons of chilli powder
- 2 teaspoons of ground cumin
- 2 bay leaves
- 1/2 cup of plain yogurt
- 2 cups of half-and-half
- 2 cups of tomato puree
- 1/2 teaspoon of cayenne pepper
- 2 pinches of black pepper
- Chicken Ingredients
- 2 tablespoons of peanut oil
- 2 pounds of boneless, bite-sized skinless chicken thighs
- 2 teaspoons of garam masala
- 2 pinches of cayenne pepper
- 2 tablespoons of cornstarch
- 1/2 cup of water
Instructions
Sauce Instructions
- Heat some oil in a saucepan over medium-high heat. Saute shallot and onion until translucent.
- Stir in butter, lemon juice, ginger and garlic pastes, garam masala, chilli powder, cumin and bay leaf. Cook, stirring, for 1 minute.
- Add tomato sauce, cook for 5 minutes, and make sure to stir.
- Add in half-and-half and yogurt, stir.
- Decrease heat to low, simmer for 10 minutes, stirring frequently.
- Remove from heat and set aside.
Chicken Instructions
- Heat 2 tablespoons of oil in a skillet over medium heat.
- Cook chicken for about 10 minutes.
- Reduce heat, and season with 2 teaspoons of garam masala and cayenne.
- Stir in a few spoonfuls of sauce, and simmer until the liquid has reduced and the chicken is no longer pink.
- Stir cooked chicken into the sauce.

- Next, mix together the cornstarch and water, then stir into the sauce. Cook for 10 minutes.
- Serve over basmati rice and enjoy
