This is a no-cook salad built on four main ingredients: fresh figs, burrata, arugula, and balsamic glaze. It takes 20 minutes from start to plated, which makes it genuinely useful when you need something impressive without turning on the stove. The flavors are straightforward — sweet, creamy, peppery, tangy — and it scales easily for a crowd.

Before you start

The only technique that actually matters here is how you handle the burrata. Pull it from the fridge at least 15 minutes before serving — cold burrata is dense and bland, and the creamy center won’t spill out the way it should. When you tear it, use your hands rather than a knife; a knife compresses the cheese and you lose that soft, loose texture. The second thing worth knowing: pat your figs dry after rinsing. Wet figs water down the balsamic glaze on the platter, and within a few minutes you end up with a puddle instead of a drizzle. Both steps take under a minute and make a real difference in the finished dish.

Troubleshooting

  • The platter looks watery by the time it reaches the table: Arugula releases moisture quickly once dressed. Build the salad as close to serving as possible, and if you’re feeding a group, keep the arugula, figs, and burrata on separate plates and assemble at the table rather than in the kitchen.
  • Figs are mealy or flavorless: Out-of-season figs often are. If that’s what you have, halve them and place them cut-side down in a dry pan over medium heat for 2–3 minutes. The heat concentrates their sugar and fixes most of the flavor problem.
  • Balsamic glaze soaks straight into the arugula: Drizzle the olive oil first and let it lightly coat the leaves before adding the glaze. The oil creates a barrier and keeps the glaze sitting on top where it’s visible and flavorful.
  • Scaling up and the cheese gets lost: One ball of burrata per two servings is the right ratio — skip the temptation to stretch it further. If you’re doubling or tripling the recipe, buy the extra cheese; it’s the centerpiece and skimping on it flattens the whole dish.
  • Arugula wilts before guests sit down: If you’re serving this at a gathering, dress only the arugula base lightly with olive oil right before guests arrive, then add the figs and burrata when you’re ready to bring it out. The leaves hold much better undressed.

Storage and reheating

This salad does not store well once assembled — the arugula wilts and the burrata weeps within about an hour. If you have leftovers, keep the components separate: washed arugula in a container lined with paper towel lasts up to two days in the fridge, and cut figs will keep for one day covered. Leftover burrata should be eaten the same day; it deteriorates quickly once torn. There is no freezing option for any part of this dish, and reheating is not applicable. The honest approach for a party is to prep everything ahead and assemble at the last moment — it genuinely takes under five minutes once the ingredients are ready.

  • 2 balls burrata cheese about 200g each
  • 4 cups arugula washed and dried

Instructions
 

  • Begin by gently rinsing the figs and cutting them into quarters. Set aside.
  • On a large serving platter, arrange the washed arugula as a base.
  • Tear the burrata into large pieces and place them on top of the arugula strategically.
  • Artfully scatter the quartered figs over and around the burrata and arugula.
  • Drizzle the extra virgin olive oil over the salad, followed by the luscious balsamic glaze.
  • Season lightly with flaky sea salt and freshly cracked black pepper to taste.
  • Serve immediately to savor the freshness.

Can I use dried figs instead of fresh?

Fresh figs work much better here. Dried figs are too chewy and sweet against the soft burrata, and they don’t release the same juice that mingles with the balsamic glaze.

What can I use instead of burrata if I can’t find it?

Fresh mozzarella is the closest substitute — tear it the same way. It’s firmer and less creamy, but the flavor pairing with figs and balsamic still works well.

Can I make this ahead for a dinner party?
