Ingredients
 
 

Spring Rolls

  • 8 sheets Rice paper wrappers Medium-sized, approximately 22cm diameter
  • 1 cup Carrots Julienned
  • 1 cup Cucumber Seeded and julienned
  • 1 cup Red bell pepper Julienned
  • ½ cup Fresh mint leaves Washed and patted dry
  • ½ cup Fresh cilantro leaves Washed and patted dry

Peanut Dipping Sauce

  • ½ cup Creamy peanut butter Natural, unsweetened preferred
  • 1 tablespoon Soy sauce Low sodium
  • 1 tablespoon Hoison sauce
  • 1 tablespoon Rice vinegar Unseasoned
  • 1 tablespoon Fresh lime juice Freshly squeezed
  • 1 teaspoon Sesame oil
  • 1 tablespoon Brown sugar
  • 1 clove Garlic Minced
  • ¼ cup Warm water To adjust consistency

Instructions
 

  • To prepare the peanut sauce, combine peanut butter, soy sauce, hoisin sauce, rice vinegar, lime juice, sesame oil, brown sugar, and minced garlic in a bowl. Stir in warm water a little at a time until the desired creamy, pourable consistency is achieved, adjusting to taste.
  • Prepare all vegetables by julienning the carrots, cucumber, and red bell pepper, ensuring similar sizes for uniformity.
  • Fill a large bowl with warm water. Dip each rice paper wrapper in the water for about 10-15 seconds, just until soft, then lay it flat on a clean, damp tea towel.
  • Near the lower third of the wrapper, arrange a small handful of carrots, cucumber, and red bell pepper, and add a few mint and cilantro leaves.
  • Fold the sides inward over the filling, then starting at the bottom, roll up tightly but gently, using your fingers to hold in the filling as you go. Repeat with remaining rolls.
  • Serve the rolls whole or cut in half on a diagonal, with the luscious peanut sauce on the side for dipping.
