This is a straightforward sandwich loaf made from pantry staples — bread flour, yeast, butter, sugar, salt, and water. The dough takes about two and a half hours start to finish, most of it hands-off, and the result is a soft, sliceable loaf that holds up to fillings without falling apart. If you’ve been buying sandwich bread out of habit rather than preference, this is worth making at least once.

The short version of why this works

Two things actually matter here. First, using bread flour instead of all-purpose gives the dough more protein, which builds stronger gluten — that’s what creates the tight, even crumb you want in a sandwich loaf rather than a crumbly, cakey texture. Second, the two-rise process (bulk rise, then a second rise in the pan) lets the gluten relax and the yeast redistribute after shaping, which is why the finished loaf has a smooth dome and consistent texture all the way through rather than dense patches near the bottom. Neither step is complicated, but skipping either one shows up clearly in the final slice.

Mistakes to avoid

  • Using all-purpose flour as a straight swap without adjusting water: All-purpose flour absorbs less liquid, so the dough will be stickier than expected. If that’s what you have, reduce the water by about 2 tablespoons and check the dough texture before adding more.
  • Shaping too loosely: A slack roll traps large, uneven air pockets that turn into holes in your slices. When you shape the log, pull the dough taut as you roll — it should feel firm, not soft and pillowy, going into the pan.
  • Skipping the hollow-tap test and relying on color alone: A golden top doesn’t always mean the inside is done. Tap the bottom of the loaf after removing it from the pan — a hollow sound means it’s cooked through. If it thuds, give it 5 more minutes directly on the oven rack.
  • Cutting into the loaf while it’s still warm: The crumb is still setting as the bread cools. Cut too early and the interior compresses and turns gummy. Skip the garnish — not worth the extra dish — and just wait the full cool before slicing.
  • Proofing in a cold kitchen and wondering why the rise stalls: Yeast slows significantly below 70°F. If your kitchen runs cold, set the covered bowl in an unheated oven with just the oven light on, or near (not on) a warm burner. The dough should feel noticeably puffy and nearly doubled — not just slightly larger.

Storage and reheating

Once fully cooled, wrap the loaf tightly in plastic wrap or slide it into a zip-top bag and keep it at room temperature for up to 3 days. Don’t refrigerate it — the fridge accelerates staling and the bread goes dry and stiff faster than it would on the counter. For longer storage, slice the whole loaf first, then freeze the slices in a single layer before transferring them to a freezer bag; they’ll keep well for up to 3 months. Frozen slices go straight into the toaster from frozen — no thawing needed — and come out with a slightly crisper edge than fresh, which works well for grilled cheese or toast.

Ingredients
 
 

  • 4 cups bread flour preferably unbleached and high-protein for best gluten development
  • 1 ½ cups warm water about 110°F (43°C)
  • 2 ¼ teaspoons active dry yeast equivalent to 1 packet
  • 2 tablespoons granulated sugar
  • 2 tablespoons unsalted butter softened
  • 1 ½ teaspoons fine sea salt

Instructions
 

  • In a large mixing bowl, whisk together warm water, sugar, and yeast. Let it sit for 5–10 minutes until the yeast becomes foamy and aromatic—this means it’s active and ready to leaven.
  • Add in the bread flour, softened butter, and salt. Mix with a wooden spoon until the dough comes together.
  • Knead the dough on a floured surface for about 10 minutes, or use a stand mixer with a dough hook on medium for 7 minutes. The dough should be smooth, elastic, and tacky—not sticky.
  • Transfer the dough to a lightly oiled bowl. Cover with plastic wrap or a damp towel and let it rise in a warm place for 1 to 1 1/2 hours, or until doubled in size.
  • Punch down the dough gently to release air. Shape it into a log roughly the length of your loaf pan, ensuring a tight roll to prevent large air pockets.
  • Grease your loaf pan and place the dough seam-side down inside it. Cover and let rise again for 30–45 minutes, or until the dough crests about 1 inch above the pan.
  • Preheat oven to 375°F (190°C). Bake the bread for 30–35 minutes, or until the top is a deep golden brown and it sounds hollow when tapped on the bottom.
  • Remove from pan promptly and allow it to cool completely on a wire rack for optimal crumb structure and sliceability.

  • For a softer crust, brush the top of the loaf with a little butter right after baking.
  • To replace butter, use a neutral oil for a dairy-free version. Bread flour can be substituted with all-purpose, though the texture may be slightly less chewy.
  • If your kitchen is cold, place the bowl in an unheated oven with the light on to help the dough rise.

Can I use instant yeast instead of active dry yeast?

Yes — use the same amount (2¼ teaspoons) and skip the proofing step; just mix it directly into the flour. Instant yeast acts faster, so your first rise may finish closer to the 1-hour mark rather than 1½ hours, so start checking early.

What if I don’t have bread flour — can I use all-purpose?

All-purpose flour works, but the loaf will be slightly softer and less structured. Reduce the water by about 2 tablespoons to compensate for the lower absorption, and expect a crumb that’s a little more tender and less chewy.

Can I use salted butter instead of unsalted?

    Thanks for the honest feedback! You’re right that “artisan” means different things to different bakers. I use the term here in the sense of homemade-from-scratch with quality ingredients, rather than the rustic high-hydration style you might be thinking of (think no-knead Dutch oven loaves).
