Creamy Chicken Salad With Grapes

This chicken salad comes together in about 40 minutes and keeps well in the fridge, which makes it genuinely useful for feeding a group without last-minute cooking. The dressing is a mix of mayonnaise, Greek yogurt, Dijon mustard, and lemon juice — creamy but not heavy — and the halved red grapes keep every bite from feeling one-note. It’s the kind of recipe you can make the night before and serve to a crowd without any stress on the day.

Smart swaps

  • Red seedless grapes: These are the right call here — they hold their shape when halved and don’t bleed into the dressing the way softer fruit can. Green grapes work too if that’s what you have; they’re a little more tart.
  • Greek yogurt: Plain full-fat yogurt is the best substitute. Sour cream works but makes the dressing noticeably richer. Avoid low-fat yogurt — it can turn watery and thin the dressing out.
  • Dijon mustard: Whole-grain mustard is a fine swap and adds a bit of texture. Yellow mustard changes the flavor profile more than you’d expect, so use half the amount if that’s all you have.
  • Toasted slivered almonds: Skip the garnish — not worth the extra dish if you’re serving this as a sandwich filling where the crunch gets lost anyway. If you want nuts in the salad itself, fold them in with the other ingredients so they’re distributed throughout.

Why this recipe works

Two things make this recipe reliable. First, the dressing uses both mayonnaise and Greek yogurt rather than all mayo. The yogurt adds acidity that keeps the dressing from tasting flat, and it also lightens the texture so the salad doesn’t feel heavy after the first few bites — which matters when you’re serving it to a group and people are going back for seconds. Second, the lemon juice goes into the dressing rather than being squeezed over the finished salad. Mixing it in early means the acid is evenly distributed and actually seasons the chicken as it sits, rather than just brightening the top layer.

Common problems and fixes

  • Dressing pools at the bottom of the bowl: This usually means the chicken was still slightly warm when you mixed everything together. Warm chicken releases moisture as it cools and thins the dressing. Let the chicken cool completely — or refrigerate it — before combining.
  • Salad tastes bland after refrigerating overnight: Cold dulls salt. Taste it again right before serving and add a small pinch of salt and a squeeze of lemon. This is especially common when you’ve doubled or tripled the batch.
  • Grapes turn mushy: Overripe grapes break down quickly once cut. Buy firm grapes and halve them no more than a few hours before mixing. If you’re prepping a day ahead, store the halved grapes separately and fold them in the morning of.
  • Salad is too wet when scaled up: Larger batches mean more total moisture from the celery and grapes. Drain any liquid that collects at the bottom of the bowl before serving, and consider adding the dressing in two stages — most of it the night before, then a small additional spoonful right before serving to freshen it up.
  • Red onion flavor is too sharp: Soak the diced onion in cold water for 10 minutes, then drain and pat dry before adding. This removes the harsh bite without losing the flavor entirely.

Storage and reheating

Store the chicken salad in an airtight container in the refrigerator for up to 3 days. The flavor is actually better on day two once everything has had time to meld. Do not freeze this — mayonnaise and yogurt-based dressings break when thawed and the texture becomes grainy and separated. There’s no reheating step; this is served cold. If you’re bringing it to a gathering, keep it in a cooler or on ice and don’t leave it out at room temperature for more than 2 hours.

Equipment

  • Large mixing bowl
  • Chef's Knife
  • Cutting board
  • Baking sheet
  • Oven or stovetop

Ingredients

  • 2 cups cooked chicken breast, diced or shredded preferably poached or roasted; avoid overly seasoned varieties
  • 1 cup red seedless grapes, halved use firm, sweet grapes for best texture and flavor
  • ½ cup celery, finely diced adds crunch and earthiness
  • ¼ cup red onion, finely diced optional for a sharper bite; soak in cold water to mellow
  • ⅓ cup mayonnaise use high-quality or homemade mayo for a creamy, rich base
  • 2 tbsp plain Greek yogurt adds tang and lightens the dressing
  • 1 tsp Dijon mustard offers depth and sharp flavor
  • 1 tbsp fresh lemon juice brightens the dressing and balances flavors
  • ¼ tsp kosher salt adjust to taste
  • ¼ tsp fresh ground black pepper optional additional seasoning
  • 2 tbsp toasted slivered almonds (optional) gives crunch and nutty depth

Instructions

  • If using uncooked chicken breasts, season lightly with salt and pepper, and roast at 375°F (190°C) for 20 minutes, or until juices run clear and internal temperature reaches 165°F (74°C). Let rest and dice once cool.
  • In a large mixing bowl, combine the chopped chicken, halved grapes, diced celery, and red onion (if using). Toss gently to distribute evenly.
  • In a separate small bowl, whisk together the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, salt, and pepper until smooth and emulsified.
  • Pour the dressing over the chicken mixture and fold gently to coat all ingredients without breaking the grapes. Taste and adjust seasoning if needed.
  • If desired, top with toasted slivered almonds just before serving for added texture and nuttiness.

Notes

Chef’s Tips:

  • Swap Greek yogurt for sour cream or keep it all mayo for a richer consistency.
  • Chicken thighs may be used for added juiciness.
  • For a lighter version, use more yogurt and less mayo.
  • Add chopped fresh tarragon or dill for herbal complexity.
  • Prepare Ahead: This salad improves as it chills, so consider making it 1-2 hours ahead. Store sealed in the fridge for up to 3 days.

Frequently asked questions

Can I make this chicken salad the day before?

Yes — it’s actually better made a day ahead. The dressing soaks into the chicken overnight and the flavors come together more fully. If you’re adding almonds, hold those until just before serving so they stay crisp.

How much does this recipe make, and how do I scale it up for a party?

The base recipe makes 4 servings, roughly enough for 4 generous sandwich fillings or 4 salad bowls. To feed 12 people, triple the recipe and mix the dressing in a separate large bowl first so it’s easier to coat everything evenly without overworking the chicken.

XXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXXX

Can I use rotisserie chicken instead of cooking my own?

Rotisserie chicken works well and saves time. Stick to the breast meat if you want a cleaner flavor, and taste the dressing before adding salt since rotisserie chicken is often already well-seasoned.

What’s the best way to serve this for a group?

Set it out in a large bowl with a serving spoon alongside croissants, sandwich bread, or lettuce cups and let people build their own. This is easier than pre-making individual sandwiches, and it keeps the bread from getting soggy if the salad sits out for a bit.

My dressing seems too thick — how do I fix it?

Add lemon juice a teaspoon at a time and stir until it loosens to the consistency you want. Avoid adding water — it dilutes the flavor. A little extra yogurt also works if you want more volume without extra richness.
