This is a grilled chicken and pineapple salad built around two things: a well-seasoned chicken breast and pineapple that actually gets charred on the grill. It comes together in 35 minutes, feeds four, and holds up well when you’re cooking for a group — the components can all be prepped ahead and assembled at the last minute without any stress.

The technique that matters

Two things decide whether this salad is good or just okay. First, let the grill get fully up to temperature — medium-high, around 400°F — before the chicken goes on. A hot grate gives you clean grill marks and seals the outside quickly, which keeps the inside from drying out over the 6–7 minutes per side. Second, don’t skip the resting step after the chicken comes off. Even five minutes of resting before you slice means the juices stay in the meat instead of running onto the cutting board. The pineapple is more forgiving, but the same rule applies: a hot grill caramelizes the natural sugars fast, so resist the urge to move the rings around — set them down and leave them alone for the full 2–3 minutes per side.

Ingredient notes

  • Fresh pineapple vs. canned: Use fresh. Canned rings are too wet and won’t caramelize — they steam instead of char. One medium pineapple gives you plenty of rings for four servings with a few extra.
  • Smoked paprika: The recipe specifically calls for smoked, not sweet or hot. It’s worth buying if you don’t have it; regular paprika gives color but not the same depth on the chicken.

What can go wrong

  • Chicken sticks to the grill: This usually means the grill wasn’t hot enough or the grates weren’t oiled. Brush the grates with a folded paper towel dipped in oil right before the chicken goes on.
  • Pineapple falls apart on the grill: Rings cut too thin — under half an inch — break when you flip them. Cut them at least ¾ inch thick and use tongs, not a spatula, to turn them.
  • Salad goes soggy before serving: If you’re making this for a group, keep the dressing separate and add it at the table. Dressed greens break down within 15–20 minutes, especially with juicy toppings like tomatoes and pineapple.
  • Chicken is cooked through but dry: Chicken breasts vary a lot in thickness. If yours are large, pound them to an even thickness before seasoning so the thin end doesn’t overcook while the thick end finishes.

Storage and reheating

Store the grilled chicken and pineapple separately from the salad greens. Sliced chicken keeps in an airtight container in the fridge for up to 3 days; grilled pineapple keeps for 2 days. The assembled greens, tomatoes, onion, and feta (undressed) will hold for about 1 day before the tomatoes start to weep. To reheat the chicken, a dry skillet over medium heat for 2–3 minutes per side works better than a microwave, which tends to make it rubbery. The pineapple can be eaten cold straight from the fridge — it’s actually good that way over the greens. This salad doesn’t freeze well; the greens and pineapple both lose their texture completely.
