This Swiss chard salad comes together in 20 minutes with one skillet and one bowl. The dressing is whisked right before serving, the almonds toast in the same dry pan you probably already have on the stove, and cleanup is minimal. If you have a bunch of chard sitting in the fridge and want something that actually tastes good raw, this is a solid answer.

Why this recipe works

Two things make this salad work. First, the almonds are toasted dry — no oil, no extra pan coating — which concentrates their flavor fast and gives you crunch that holds up once the dressing goes on. Second, the dressing uses Dijon mustard as an emulsifier, not just for flavor. That half teaspoon is what keeps the olive oil and lemon juice from separating into a puddle at the bottom of the bowl. Let the dressed salad sit for five minutes before serving and the chard softens just enough to lose its raw edge without going limp.

Ingredient notes

  • Swiss chard: Rainbow chard works fine here, but the stems are tougher than the leaves. Chop them smaller than the leaves or leave them out entirely if you want a more tender bite.
  • Dried cranberries: Check the label — many brands add a lot of sugar. Unsweetened or lightly sweetened ones let the honey in the dressing do that job instead.
  • Feta cheese: Block feta packed in brine is saltier and creamier than the pre-crumbled kind. If you use block feta, taste the salad before adding any extra salt.
  • Honey vs. maple syrup: Either works. Maple syrup blends into the dressing slightly faster when cold.

What can go wrong

  • Almonds burn before they brown: A dry skillet over medium heat can spike fast. Pull the pan off the burner the moment you smell them — they keep cooking from residual heat for another 30 seconds.
  • Chard tastes too bitter: Older or larger leaves are more bitter than young ones. Strip the leaves from the thickest stems and use only the leafy parts. The cranberries and dressing help, but they can’t fully mask very tough, mature chard.
  • Dressing sits on top instead of coating: The chard needs to be completely dry before you dress it. Wet leaves repel oil-based dressings. Spin or pat dry after washing.
  • Salad goes watery fast: Cranberries release moisture once dressed. If you’re not eating right away, keep the dressing separate and combine just before serving.
  • Feta makes it too salty: If your feta is very briny, rinse it briefly under cold water and skip the added salt in the dressing until you’ve tasted the finished salad.

Make-ahead notes

The chopped chard, toasted almonds, cranberries, and feta can all be prepped and stored separately in the fridge for up to two days. The dressing keeps in a small jar for up to five days — give it a shake before using since it will separate. Skip the garnish of extra nuts on top if you’re making this ahead; they soften quickly and aren’t worth the extra dish. Once dressed, the salad holds for about an hour at room temperature but starts to wilt after that. It doesn’t freeze.

  • ¼ teaspoon freshly ground black pepper for the best flavor

Instructions
 

  • In a dry skillet over medium heat, toast the almonds for 3-4 minutes until golden and fragrant. Stir occasionally to prevent burning. Remove from heat and let cool.
  • In a large mixing bowl, combine the finely chopped Swiss chard, toasted almonds, dried cranberries, and crumbled feta cheese.
  • In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, sea salt, and black pepper until emulsified.
  • Pour the dressing over the salad and toss gently to coat the ingredients evenly.
  • Let the salad sit for about 5 minutes to allow the flavors to meld. Serve immediately.
