This is the crescent-roll version: eight cocktail sausages wrapped in store-bought dough, brushed with egg wash, and baked at 375°F for about 15 minutes. The result is a batch of warm, golden rolls that disappear fast at parties — and reheat just as well the next day for a quick snack or lunchbox addition. If you need something crowd-friendly that takes under 40 minutes start to finish, this is a reliable choice.

The short version of why this works

Two things actually matter here. First, placing the rolls seam-side down on the baking sheet keeps them from unraveling as the dough puffs — skip this and you’ll end up with open-faced rolls instead of tidy parcels. Second, the egg wash isn’t just cosmetic. It seals the outer layer of dough slightly before the heat sets in, which gives you a firmer, crispier crust rather than a soft, pale one. Both steps take about 30 seconds each and make a real difference in the finished texture.

If something goes sideways

  • The dough tears when you roll it: Crescent dough dries out fast once unrolled. Work quickly, and if it’s already stiff, press the tear back together with your fingertip — it will seal during baking. Don’t stretch the triangle to compensate; use a slightly smaller sausage instead.
  • The bottoms are pale and soft while the tops are golden: Your baking sheet is too thick or too light-colored. Move the rack one position lower, or add a second baking sheet underneath to boost bottom heat. Parchment alone won’t fix this.
  • The sausages split and leak grease onto the pan: This usually means the oven ran hot or the sausages were frozen and not fully thawed. Pat sausages dry before rolling and verify your oven temperature with a thermometer — many home ovens run 15–25°F off.
  • The rolls are done on the outside but doughy near the seam: They were packed too close together on the pan. Give each one at least an inch of clearance so hot air can circulate around the sides. If you’re doubling the batch, use two pans rather than crowding one.
  • The egg wash pools in the folds and burns: You used too much. A thin, even coat is all you need — wipe excess off the brush on the bowl edge before applying. Skip the garnish on any rolls you plan to freeze; the seeds go stale and add nothing after reheating.

Keeping and reheating

Baked pigs in a blanket keep in an airtight container in the fridge for up to 4 days. To reheat, use a 350°F oven or toaster oven for 6–8 minutes — this brings the crust back to crisp. The microwave works in a pinch but leaves the dough soft and slightly chewy, so use it only if you don’t mind the texture change. For longer storage, freeze them in a single layer on a baking sheet until solid, then transfer to a zip-top bag; they’ll keep for up to 2 months. Reheat straight from frozen at 375°F for 10–12 minutes with no thawing needed. Making a double batch specifically for the freezer is worth it — the effort is almost identical and you’ll have a ready snack for game day, school nights, or last-minute guests.

  • 1 package refrigerated crescent roll dough (8 oz) preferably Pillsbury or a quality store-brand
  • 8 pieces cocktail sausages also known as Lil’ Smokies or mini beef franks
  • 1 large egg for egg wash
  • 1 tbsp water to mix with egg wash

For the Optional Garnishes:

  • 1 tsp poppy seeds for added crunch and presentation
  • 1 tsp everything bagel seasoning for an aromatic, savory twist

Instructions
 

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to ensure the pigs won’t stick and brown evenly.
  • Unroll the crescent roll dough and separate it into 8 triangles along the perforated edges. If using rectangle sheets, cut into 8 even triangles using a pizza cutter.
  • Place one cocktail sausage at the widest end of each triangle and roll toward the point to wrap it snugly.
  • Place the wrapped sausages seam-side down on the prepared baking sheet, spacing them at least 1 inch apart.
  • In a small bowl, whisk together the egg and water. Using a pastry brush, lightly coat each piece with the egg wash. This will result in a shimmery, golden-brown finish.
  • Optionally sprinkle with poppy seeds, everything seasoning, or leave plain.
  • Bake in the oven for 13–15 minutes, or until the dough is deeply golden and puffed. Look for a firm crust with a deep aroma of butter and roasted sausage.
  • Let cool for 5 minutes before serving. Hot interiors can burn if rushed!
