Chana chaat is a no-cook chickpea salad dressed with tamarind chutney, fresh vegetables, and a short list of spices you can find at any Indian grocery store. It takes 30 minutes start to finish, requires no heat, and the whole thing comes together in one bowl. If you want something filling that isn’t heavy, this is a reliable weeknight option.

Before you start

The two things that actually matter here are dryness and timing. Wet chickpeas water down the tamarind chutney fast, turning the whole bowl soupy — so after rinsing, spread them on a clean kitchen towel and pat them thoroughly dry before anything goes in the bowl. The second thing is the 5-minute rest after you toss everything together. It isn’t optional padding in the instructions; the chaat masala and lemon juice need that short window to work into the chickpeas. Skip it and the spices taste raw and separate rather than blended. Set a timer and use those minutes to get your bowls out.

  • Canned chickpeas are falling apart: Some canned chickpeas are softer than others. Rinse them very gently in a colander and handle them minimally when tossing — use a folding motion rather than stirring aggressively.

Substitutions that actually work

Chaat masala is the one ingredient worth tracking down — it contains dried mango powder (amchur) and black salt, and there’s no single-spice substitute that replicates it. Most Indian grocery stores carry it for a few dollars, and it keeps for months. Tamarind chutney is widely available jarred; Swad and Laxmi are common brands that work well. If you genuinely can’t find it, a mix of pomegranate molasses and a small splash of Worcestershire gets you in the right ballpark for tang, though the flavor won’t be identical. For the sev garnish — skip it. It goes soft within minutes of hitting the dressed chickpeas, and washing an extra bowl for something that loses its texture that fast isn’t worth it. Fresh coriander is easy to replace with flat-leaf parsley if coriander is a problem for your household.

  • Start by rinsing and draining the chickpeas well, ensuring there's no excess water.
  • In a large mixing bowl, combine the chickpeas, diced tomatoes, cucumber, and chopped red onion. Gently mix.
  • Add the tamarind chutney, chaat masala, roasted cumin powder, and red chili powder to the bowl. Toss the ingredients gently to ensure the flavors meld together.
  • Squeeze the lemon juice over the mixture and toss gently once more.
  • Let the combination sit for about 5 minutes to allow the flavors to develop. This can also act as your resting time to finish prepping garnishes if needed.
  • Before serving, taste and adjust the seasoning if necessary.
