This ground turkey soup comes together in 45 minutes with a short list of everyday ingredients — carrots, celery, canned tomatoes, and low-sodium chicken broth. Ground turkey cooks faster than whole cuts and stays tender in the broth, which makes this a genuinely useful weeknight dinner rather than a weekend project. It also scales up easily, so it’s one of those recipes worth keeping in regular rotation.

Shopping notes

  • Ground turkey: Packages labeled 93% lean work best here. The 99% fat-free version can turn grainy and dry in soup. If your store only carries the extra-lean, add a small drizzle of olive oil when browning.
  • Chicken broth: Low-sodium is called for because the canned tomatoes and any added salt give you enough control. Regular broth can make the finished soup taste flat-salty in a way that’s hard to fix.
  • Diced tomatoes: One standard 14.5 oz can is the right amount. Fire-roasted diced tomatoes are a straightforward swap if you want a slightly smokier base.
  • Bay leaf: The recipe card lists it in the instructions but not the ingredient list — grab one from your spice rack before you start.

Why this recipe works

Two things matter most here. First, browning the ground turkey before anything else goes into the pot builds a layer of savory flavor that simmering alone can’t create — don’t rush this step or crowd the pan, or the meat steams instead of browns. Second, adding the carrots and celery before the broth gives them a few minutes of direct heat, which softens their raw edge and keeps them from tasting like they were just dropped into hot liquid at the last minute. Those two steps are what separate a soup that tastes cooked from one that tastes assembled.

Common problems and fixes

  • Soup tastes thin or flat: The broth needs more time or more seasoning. Let it simmer uncovered for an extra 5 minutes to concentrate, then taste and adjust salt before serving.
  • Turkey is crumbly and dry: It was overcooked during the browning stage or the heat was too high during the simmer. Next time, pull it off the sear as soon as no pink remains, and keep the simmer at a gentle bubble, not a rolling boil.
  • Vegetables are mushy: The carrots and celery went in too early or the soup simmered too long. Cut them a little thicker — about ¼ inch — and check doneness at the 10-minute mark of the covered simmer rather than waiting the full 15.
  • Soup is too thick after sitting overnight: The vegetables absorb liquid as the soup cools. Add a splash of broth or water when reheating and taste for seasoning again, since diluting it slightly will dull the salt level.
  • Greasy surface on the finished soup: Some ground turkey packages have more fat than the label suggests. Skim the surface with a spoon after the first few minutes of simmering, or refrigerate the soup and lift the solidified fat off the top before reheating.

Make-ahead notes

This soup keeps well in the fridge for up to 4 days in a sealed container. The flavor is noticeably better on day two once everything has had time to settle. For the freezer, cool the soup completely, then store in portions for up to 3 months — quart-sized freezer bags laid flat take up less space than containers, which matters when you’re doubling the batch to feed a group. Reheat on the stovetop over medium-low heat, stirring occasionally; the microwave works but tends to make the turkey a little rubbery around the edges. Skip the parsley garnish if you’re making this ahead — not worth the extra dish when the soup is being reheated anyway.

Ingredients

  • 1 tablespoon olive oil extra virgin for best flavor
  • 1 pound ground turkey preferably organic
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups celery sliced
  • 4 cups chicken broth low sodium preferred
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 pinch salt to taste
  • 1 pinch pepper to taste
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions

  • Heat the olive oil in a large pot over medium heat. Add the ground turkey and cook until browned, stirring frequently, about 5 to 7 minutes.
  • Add the diced onion and minced garlic to the pot, sautéing until the onion becomes translucent and aromatic, approximately 3 to 5 minutes.
  • Stir in the sliced carrots and celery, cooking for an additional 5 to 7 minutes until the vegetables begin to soften.
  • Pour in the chicken broth and add the can of diced tomatoes, along with the thyme, oregano, and bay leaf. Bring the mixture to a simmer.
  • Season the soup with salt and pepper to taste. Cover the pot and let it simmer on low heat for 15 minutes, allowing the flavors to meld.
  • Remove the bay leaf before serving. Ladle the soup into bowls and garnish with fresh parsley.

Notes

For a heartier option, consider adding a cup of cooked barley or quinoa into the soup.

FAQ

Can I double this recipe to feed a larger group?

Yes, and it doubles without any adjustments to technique or timing. Use a pot that holds at least 8 quarts so the turkey has room to brown rather than steam, and give the vegetables an extra minute or two to soften since there’s more mass in the pot.

Can I use ground chicken instead of ground turkey?

Ground chicken works fine as a direct swap. It has a slightly milder flavor, so you may want to add an extra pinch of oregano or a small squeeze of lemon at the end to keep the soup from tasting flat.

Do I need to drain the fat after browning the turkey?

Only if there’s a visible pool of liquid in the pan. Most 93% lean turkey releases very little fat, so draining is usually unnecessary and you’d lose some of the browned bits that add flavor.

Can I add pasta or rice directly to the soup?

You can, but cook them separately and add them at serving time. Pasta and rice absorb a lot of liquid and turn mushy if they sit in the soup, especially in leftovers.

My carrots are still firm after the simmer — what do I do?

Just keep the lid on and give it another 5 to 10 minutes on low heat. Carrot thickness varies a lot depending on how they’re sliced, so cook to texture rather than strictly to the clock.

Is there a way to make this soup thicker without adding starch?

Mash a small portion of the cooked carrots and stir them back in — it adds body without changing the flavor. Alternatively, remove the lid for the last 5 minutes of simmering to let some liquid evaporate.
