This is a straightforward Portuguese octopus salad — poached, lightly grilled, then tossed with tomatoes, cucumber, olives, onion, and parsley in a lemon-olive oil dressing. The honest reason to make it: it comes together in about 90 minutes, most of that is hands-off simmering, and the result is genuinely impressive for how little active work it takes.

The technique that matters

The simmer is everything here. Octopus goes from rubbery to tender inside a window — rush it or pull it too early and you’ll be chewing for a while. Keep the heat low once it’s boiling, and test with a fork at the 45-minute mark. It should slide in with almost no resistance. The quick grill afterward is short — just 3 to 4 minutes per side — and its only job is adding a little char and firming up the outside slightly. Don’t skip it, but don’t overdo it either; the octopus is already cooked through at that point.

  • The octopus is chewy after an hour: Keep simmering. Some octopus, especially larger ones or those that weren’t fully thawed, need up to 90 minutes. Test every 10 minutes rather than pulling it too soon.
  • The salad is watery after sitting: Tomatoes and cucumber release liquid once salted. If you’re making this ahead, salt the cucumber separately, let it sit in a colander for 15 minutes, then pat it dry before adding it to the bowl.
  • The onion flavor is too sharp: Soak the sliced red onion in cold water for 10 minutes, then drain. This takes the edge off without losing the crunch — useful if you’re serving kids or anyone sensitive to raw onion.
  • The octopus sticks to the grill: Make sure the grill is fully preheated and brush the octopus pieces lightly with olive oil before they go on. A cold or under-oiled grill is almost always the cause.
  • The dressing tastes flat: Taste before serving and adjust. Octopus can absorb salt quickly, so the balance shifts as it sits. A small squeeze of extra lemon juice usually fixes it.

Storage and reheating

Store leftovers in an airtight container in the fridge for up to 2 days. The flavors actually improve after a few hours as everything marinates together, so making it the morning of a dinner works well. Skip the garnish of extra parsley until serving — not worth the extra dish. Do not freeze this salad; the cucumber and tomato turn mushy and the octopus texture suffers. This dish is meant to be served cold or at room temperature, so there’s no reheating needed — just pull it from the fridge about 15 minutes before serving to take the chill off.

Instructions
 

  • Begin by cleaning the octopus under cold running water. Place it in a large pot and cover it with water. Add a pinch of salt.
  • Bring the water to a boil, then reduce the heat to a gentle simmer. Let it cook for approximately 45 minutes to 1 hour, or until the octopus is tender when pierced with a fork.
  • Once cooked, remove the octopus and let it cool slightly. Cut into 1-inch pieces.
  • Preheat a grill or grill pan over medium-high heat. Grill the octopus pieces for 3-4 minutes on each side to achieve a slight char and enhanced flavor.
  • In a mixing bowl, combine the grilled octopus, diced tomatoes, cucumber, olives, onion, and parsley.
  • Drizzle with olive oil, lemon juice, sea salt, and black pepper. Toss gently to combine, ensuring everything is evenly coated.
  • Allow the flavors to meld by letting the salad sit for 10 minutes before serving.
