Chakalaka: A Spicy South African Vegetable Relish

Chakalaka is a South African spiced vegetable relish built on onion, carrot, bell pepper, tomato, and baked beans — cooked down in about an hour with pantry spices. It costs almost nothing to make, it keeps well, and a single batch goes with more meals than you’d expect.

Before you start

The one thing that actually matters here is building the base in stages rather than dumping everything in at once. Sauté the onion fully — a soft, translucent onion with a little color gives the whole dish its backbone. If you rush it, the finished relish tastes flat. The second thing worth knowing: grate the carrots rather than dicing them. Grated carrot breaks down into the sauce as it simmers, thickening it slightly and distributing the sweetness evenly. Diced carrot stays chunky and takes longer to soften, which throws off the timing.

Troubleshooting

  • The relish is watery after simmering: Your canned tomatoes had more liquid than usual. Remove the lid and turn the heat up slightly for the last 5 minutes to cook off the excess. It should coat a spoon, not pool on the plate.
  • It tastes flat even after seasoning: Curry powder loses its punch quickly once opened. If your jar has been in the cupboard for more than six months, use half again as much as the recipe calls for, then taste before adding more salt.
  • The baked beans turned mushy: They went in too early or the heat was too high. Add them only in the last 10 minutes and keep the simmer gentle — they just need to warm through and absorb flavor, not cook further.
  • It’s too sweet: Some canned tomatoes are noticeably sweeter than others. A small splash of red wine vinegar or a squeeze of lemon juice at the end will balance it out without changing the character of the dish.
  • The vegetables are still firm after the full cook time: Pan size matters. If you’re using a small saucepan, the vegetables steam rather than sauté and the simmer is uneven. Switch to a wide, heavy pan — a 10- or 12-inch skillet works better than a deep pot for this recipe.

Shopping notes

  • Curry powder: Any mild curry powder works. A Madras-style blend adds more heat; a standard supermarket blend keeps it family-friendly. Skip the garnish of fresh herbs some versions call for — not worth the extra dish.
  • Smoked paprika: Regular sweet paprika is fine, but smoked paprika genuinely changes the flavor in a useful way here. It’s worth buying if you don’t have it — you’ll use it on roasted vegetables and eggs too.
  • Baked beans: Standard canned baked beans in tomato sauce work. Drain and rinse them so the extra sauce doesn’t make the relish too sweet or too thick to control.
  • Bell peppers: Mixed colors look good and taste slightly different from each other, but if you only have green, use them. The dish won’t suffer.

Leftovers and make-ahead

Chakalaka is genuinely better the next day — the spices settle and the flavors even out overnight. Store it in an airtight container in the fridge for up to 5 days. It also freezes well in portion-sized containers for up to 3 months; thaw overnight in the fridge and reheat gently in a small pan over low heat, adding a tablespoon of water if it’s thickened too much. A batch made on Sunday will work through the week as a side with grilled chicken or sausages, spooned over scrambled eggs, stirred into a grain bowl, or eaten cold with crusty bread for lunch. If you’re planning to freeze most of it, hold the baked beans and stir them in fresh when you reheat — they hold their texture much better that way.

  • 2 tablespoons olive oil extra virgin preferred
  • 1 cup onion finely chopped, about 1 large onion
  • 2 cloves garlic minced
  • 1 cup carrots grated
  • 1 cup bell peppers mixed colors, diced
  • 1 can chopped tomatoes 400g can
  • 1 teaspoon curry powder
  • 1 teaspoon paprika smoked for additional depth
  • ½ cup baked beans drained and rinsed
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly ground

Instructions
 

  • Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent, approximately 5 to 7 minutes. This will develop a deep sweetness in the onion.
  • Add the minced garlic and grated carrots, continue to sauté for another 5 minutes until the carrots begin to soften.
  • Stir in the diced bell peppers, cooking for 3 to 4 minutes until they start to soften, yet still retain a vibrant color.
  • Add the chopped tomatoes, along with their juices, to the pan. Stir in the curry powder and smoked paprika. Allow the mixture to simmer gently for about 15 minutes, stirring occasionally.
  • Fold in the baked beans, salt, and black pepper. Let the mixture simmer for another 10 minutes until all the flavors meld together beautifully.
  • Adjust the seasoning as needed, then remove from heat and allow to cool slightly before serving.

Can I make chakalaka without baked beans?

Yes — leave them out and the dish still works as a vegetable relish. You can substitute cooked chickpeas or kidney beans if you want to keep some protein in there, or just skip legumes entirely.
