This is a creamy, finely shredded coleslaw built to taste like the KFC version — tangy dressing, a little sweet, soft enough cabbage without being soggy. The honest reason to make it at home is that you can mix it the night before and it’s ready when you need it, which makes it genuinely useful for cookouts, weeknight dinners, or anything where one less last-minute task matters.

The short version of why this works

Two things actually matter here. First, how fine you shred the cabbage. Coarse shreds stay stiff and don’t absorb the dressing evenly — fine shreds soak it up and give you that soft, cohesive texture the original is known for. A food processor makes this fast and consistent, but a sharp knife and patience get you there too. Second, the dressing uses both buttermilk and whole milk alongside the mayonnaise, which keeps it pourable and light rather than thick and heavy. That ratio is what stops the finished slaw from tasting like you’re eating straight mayo. Skip the garnish — not worth the extra dish.

Troubleshooting

  • Dressing pools at the bottom after chilling: The cabbage released water into the bowl. This usually means the cabbage wasn’t dried well after rinsing, or the slaw sat too long past the 24-hour mark. Pat the shredded cabbage with a clean towel before mixing, and drain off any liquid before serving.
  • Slaw tastes flat or bland: The sugar and vinegar need to be in balance — if one is off, the whole dressing falls flat. Taste the dressing before you pour it on the cabbage and adjust. A small extra splash of apple cider vinegar usually fixes a dressing that tastes dull.
  • Cabbage still tastes raw and harsh after chilling: Two hours is the minimum, but if your cabbage is very fresh and tightly packed, it needs longer. Give it a full overnight rest and the sharpness mellows considerably.
  • Onion flavor is too strong: Grated raw onion can be sharp. Rinse the grated onion briefly under cold water and squeeze it dry before adding it to the mix. This takes the edge off without losing the flavor entirely.
  • Slaw turns gray or dull-looking: This happens when it sits beyond 48 hours or is stored in a container that isn’t airtight. Use a snug-lidded container and plan to serve it within two days for the best color and texture.

Keeping and reheating

This coleslaw keeps well in the fridge for up to 3 days in an airtight container — day two is often the sweet spot, since the flavors have had time to come together fully. After day three the cabbage softens past the point of being pleasant and the dressing starts to separate. Give it a good stir before serving each time and drain off any liquid that has collected. Do not freeze this slaw. The mayonnaise-based dressing breaks when frozen and thawed, and the cabbage turns limp and watery. There’s no reheating involved — it’s served cold straight from the fridge.

  • In a large mixing bowl, combine the finely shredded green cabbage, grated carrot, and minced onion. Toss together gently to evenly distribute. Refrigerate while preparing the dressing.
  • In a separate medium-sized bowl, whisk together the mayonnaise, buttermilk, milk, sugar, apple cider vinegar, salt, and pepper until smooth and well emulsified.
  • Pour the dressing over the cabbage mixture, and toss gently until completely coated. The slaw should be creamy and slightly wet, with no puddles of dressing at the bottom.
  • Cover the bowl with plastic wrap or a lid, and refrigerate for at least 2 hours to allow flavor to meld. Overnight chilling is ideal for maximum flavor maturity.
