  • 1 tbsp olive oil

  • ½ tsp garlic powder
  • ¼ tsp salt

For the Caesar Dressing:

  • ⅓ cup Greek yogurt or mayonnaise
  • 2 tbsp lemon juice freshly squeezed
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 cloves garlic minced
  • ¼ cup Parmesan cheese grated
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

For the Salad:

  • 1 bunch kale stems removed, leaves chopped
  • ⅓ cup Parmesan cheese shaved
  • ½ cup croutons optional

Instructions
 

  • Prepare the Crispy Chickpeas: Preheat your oven to 400°F (200°C). Toss the drained chickpeas with olive oil, smoked paprika, garlic powder, and salt. Spread in a single layer on a baking sheet and roast for 20-25 minutes, stirring halfway through, until crispy and golden brown.
  • Make the Dressing: In a mixing bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, Worcestershire sauce, minced garlic, Parmesan cheese, olive oil, salt, and black pepper until smooth and well combined. Set aside.
  • Prepare the Salad: Place the chopped kale in a large bowl. Add a small drizzle of olive oil and massage the leaves for 1-2 minutes until they become slightly softened.
  • Assemble the Salad: Drizzle the dressing over the kale and toss to coat evenly. Add the crispy chickpeas and shaved Parmesan. If desired, top with croutons for extra crunch.
  • Serve: Transfer to serving plates and enjoy immediately. Garnish with extra Parmesan and freshly ground black pepper for an extra touch.
