These are fresh Vietnamese-style spring rolls — uncooked, wrapped in rice paper, and filled with julienned carrots, cucumber, red cabbage, butter lettuce, mint, and cilantro. The whole thing comes together in 30 minutes with no heat required. If you want a light lunch or a no-fuss appetizer that actually looks impressive, this is a reliable option.

What makes this version work

Two things matter here more than anything else. First, the soak time on the rice paper: 5–10 seconds in lukewarm water, then stop. The wrapper keeps softening on the counter while you fill it, so if it feels slightly stiff when you lift it out, that’s correct. Over-soaked wrappers tear the moment you try to fold them, and there’s no fixing that. Second, the peanut sauce uses natural peanut butter — the kind where the oil separates — rather than a sweetened commercial spread. That gives you a deeper, roasted flavor that holds up against the raw vegetables. The warm water is what brings it together into a smooth, spoonable consistency, so add it gradually and stop when it coats a spoon without being gluey.

Smart swaps

  • Rice paper wrappers: These are the one ingredient worth tracking down at an Asian grocery store or online — standard supermarkets sometimes carry them, but quality varies. The 22cm round size gives you enough room to fold without the roll getting too thick to eat.
  • Natural peanut butter: If you only have regular sweetened peanut butter, reduce or skip the maple syrup entirely so the sauce doesn’t tip into dessert territory.
  • Maple syrup: Honey works directly in its place. A small pinch of brown sugar dissolved in the warm water also does the job.
  • Soy sauce: Tamari makes this gluten-free with no other changes needed. Coconut aminos work too — just know the sauce will be slightly sweeter and less salty, so taste before serving.
  • Sesame oil: Skip it if you don’t have it — the sauce is still good. Don’t substitute with regular vegetable oil; it adds nothing.
  • Vegetables: The specific mix is flexible. Thinly sliced bell pepper, shredded romaine, or bean sprouts all work. Avoid anything with high water content that will make the wrapper soggy, like tomato.

Mistakes to avoid

  • Stacking finished rolls directly on top of each other: The wrappers stick together and tear when you pull them apart. Lay them in a single layer on a lightly damp surface, or place a small piece of parchment between them.
  • Cutting the rolls immediately after wrapping: Give them 2–3 minutes to set first. Slicing too soon causes the wrapper to bunch and the filling to slide out.
  • Packing the filling too tightly: It’s tempting to load them up, but overfilled rolls split at the seam. A modest, even layer of each ingredient rolls cleanly and holds its shape.
  • Making the sauce too thick and skipping the taste check: Peanut butter brands vary a lot in saltiness and sweetness. Always taste the sauce before serving and adjust lime juice or soy sauce as needed — a sauce that tastes flat usually just needs more acid.
  • Prepping rolls too far in advance: These are best assembled within an hour of eating. If you need to get ahead, prep and refrigerate all the vegetables separately, then roll just before serving. Skip the garnish of extra herbs on the plate — not worth the extra dish.

For the Spring Rolls:

  • 8 pieces rice paper wrappers (22cm round) use high-quality Vietnamese rice paper for best texture
  • 1 cup julienned carrots use fresh, crisp carrots
  • 1 cup seedless cucumber, julienned English cucumbers recommended for thin skin
  • 1 cup shredded red cabbage adds color and crunch
  • ½ cup fresh mint leaves leave whole for easiest placement
  • ½ cup fresh cilantro leaves rough stems removed
  • 1 cup butter lettuce leaves use tender inner leaves, torn as needed

For the Peanut Dipping Sauce:

  • ½ cup creamy peanut butter natural peanut butter without added sugar is best
  • 2 tablespoons soy sauce low-sodium preferred
  • 1 tablespoon maple syrup alternatively use honey
  • 1 tablespoon lime juice freshly squeezed is essential
  • 1 teaspoon sesame oil adds depth and aroma
  • 2 tablespoons warm water adjust for consistency

Instructions
 

Prepare All the Vegetables and Herbs:

  • Julienne the carrots and cucumbers, shred the cabbage, and wash + dry the fresh herbs and lettuce. Arrange everything in a mise en place for easy assembly.
  • Fill a shallow bowl with lukewarm water. One at a time, dip a rice paper wrapper into the water for about 5–10 seconds until just pliable. Don’t over-soak, as the wrapper will continue to soften as you work.
  • Place the softened wrapper flat on a clean surface. Beginning about 1 inch from the bottom, layer a few pieces of lettuce, some carrot, cucumber, cabbage, mint and cilantro. Don’t overfill, or it will tear when rolling.
  • Fold the bottom of the wrapper up tightly over the filling, then fold in the sides like an envelope. Roll upward until completely sealed. Repeat with remaining wrappers and filling.

To Make the Peanut Sauce:

  • In a bowl, whisk together the peanut butter, soy sauce, maple syrup, sesame oil, lime juice, and warm water until smooth. Add additional water to thin if needed.
  • Serve immediately with dipping sauce on the side, or cover with a damp cloth to serve within an hour.

My rice paper keeps tearing. What am I doing wrong?

Is there a substitute for peanut butter if someone has a nut allergy?
