  • 2 cups cucumber peeled and diced; preferably English or Persian cucumbers for their delicate flavor
  • 2 cups tomatoes diced; use ripe, organic heirloom tomatoes for the best flavor
  • 1 cup red onion finely chopped; soak in cold water 10 mins to mellow the harshness
  • 1 small green chili finely chopped; adjust amount based on desired heat level
  • 1 small handful fresh coriander leaves coarsely chopped
