This is a straightforward creamy coleslaw — shredded green and purple cabbage with carrots, tossed in a mayo-based dressing that’s tangy from apple cider vinegar, lightly sweet from honey, and rounded out with Dijon and celery seed. It takes 15 minutes and no cooking, which makes it one of the most useful sides you can have in your back pocket for grilling season or any night you need something fresh alongside a heavy main.

What makes this version work

Two things actually matter here. First, the ratio of mayo to vinegar — ¾ cup mayo to 2 tablespoons apple cider vinegar keeps the dressing creamy without being heavy or flat. Too much vinegar and the cabbage wilts fast; too little and the whole thing tastes like straight mayo. Second, the resting time. Fifteen minutes in the fridge isn’t optional — it’s when the salt draws a little moisture out of the cabbage and the dressing loosens slightly to coat everything evenly. Skip it and the slaw tastes underdressed even when it isn’t. The Dijon and celery seed are small amounts, but they’re doing real work: the mustard emulsifies the dressing so it clings instead of pooling at the bottom of the bowl.

Shopping notes

  • Apple cider vinegar: White wine vinegar works as a direct swap. Plain white vinegar is sharper — use 1½ tablespoons instead of 2 if that’s what you have.
  • Dijon mustard: Yellow mustard substitutes fine. It’s milder and slightly sweeter, so the flavor shifts a little but nothing breaks.
  • Honey: Any liquid sweetener works — maple syrup, agave, or even a teaspoon of white sugar dissolved into the vinegar before mixing. Skip the garnish — not worth the extra dish.
  • Celery seed: Easy to skip if you don’t have it. A small pinch of celery salt (reduce the kosher salt slightly to compensate) gets you close.
  • Purple cabbage: Purely for color. Use all green if that’s what you have — the flavor is identical.

What can go wrong

  • Watery slaw after sitting: Cabbage releases liquid over time. If you’re making this more than 2 hours ahead, toss the shredded cabbage with a pinch of salt first, let it sit 10 minutes, then squeeze out the excess water before adding the dressing. The slaw holds its texture much longer.
  • Dressing that tastes flat: Taste the dressing before it goes on the cabbage. If it seems bland, it almost always needs more salt — not more vinegar or mustard. Add a small pinch and whisk again.
  • Uneven coating: If the dressing clumps in spots, the mayo was too cold. Let it sit at room temperature for 5 minutes before whisking. Cold mayo doesn’t emulsify as smoothly.
  • Cabbage shreds that are too thick: Thick pieces don’t absorb dressing well and stay tough. If you’re cutting by hand, aim for shreds no wider than ⅛ inch. A sharp knife makes this easier than it sounds.
  • Slaw that’s too sweet or too tangy: Taste after the rest period, not before — the flavors shift as the cabbage absorbs the dressing. Adjust with a small splash of vinegar or a tiny drizzle of honey at the end rather than during mixing.

Storage and reheating

Coleslaw keeps well in an airtight container in the fridge for up to 3 days. The texture softens gradually — it’s at its crunchiest within the first few hours and still good but noticeably softer by day 3. Give it a stir before serving since the dressing settles. Freezing isn’t practical here; the cabbage turns limp and watery once thawed and the dressing breaks. There’s no reheating — this is served cold straight from the fridge.
