These garlic butter cheese waffles are garlic bread in cheese waffle form. They are pretty much the most delicious things you could ever consume. They go great with spaghetti or lasagna, but if left to my own devices, I'd probably eat all of these in one go.
Preheat the waffle iron. Mix flour, cornmeal, nutritional yeast, baking powder, salt, and a few grinds of black pepper in a medium bowl.
In a small bowl, combine vinegar and soymilk and stir together. Add the water and oil. Add the milk mixture to the flour mixture, and stir until well mixed. Stir in the shredded cheese.
Carefully grease the hot waffle iron with an oil spray, or use a pastry brush and lightly coat with oil. Scoop batter with a heaping 1/3 cup measure (or smaller, depending on your waffle iron) and place on the iron. Close the lid and cook until crispy and golden. Repeat with the remaining batter. This recipe was tested on a Belgian waffle iron, and the waffles generally take 7 to 8 minutes to cook.
