Mix together the hoisin sauce, soy sauce, sunflower oil, garlic and ginger, and marinate the sliced chicken breast for a minimum of 20 minutes.
Put in the oven at 200 degrees Celsius, 180 degrees Celsius fan oven, 400 degrees Fahrenheit or gas 6, on a foil-lined baking tray. Take out every 10 minutes to add any left-over sauce.
Meanwhile, you can boil the rice to packet instructions and steaming or stir-fry the bok choy. Steam it for 5 to 10 minutes, or stir-fry for 2 minutes.
Beat the egg, then fry on both sides in a small pan before cutting into strips.
Add your egg strips, chilli, spring onions and coriander to your rice when all is cooked, and serve!
