Nothing beats the goodness of freshly baked cookies. For me, these sugar and spice cookies are by far one of the easiest to prepare and they never fail to impress. Here's the recipe I keep well.
Mix flour, baking soda, baking powder, salt, and spices in a small bowl. Set aside.
In another bowl, beat sugar and soft butter together until creamy and fluffy.
Beat in eggs and then the vanilla and almond extracts.
Add flour mixture, mixing until all is incorporated. The dough should look like wet sand yet stick together when pinched together.
Using a 1 teaspoon scoop, place scoops of dough onto a cookie sheet lined with either parchment paper or a Silpat mat. For making 3-inch cookies, use a 1 tablespoon scoop. Bake for 8 to 10 minutes. Let cookies to cool for a couple of minutes before serving.
