2½cupschickenor vegetable broth
8ouncesdry penneor pasta of choice
1pinchsalt
1pinchpepper
1handfulparmesanfreshly grated
¼cupchopped parsleyoptional
Instructions
Heat oil in a large skillet over medium-high heat.
Add sausage and onion and season with salt and pepper; cook until the sausage has a bit of caramelization and the onion is softened for about 3-4 minutes.
Add chicken broth and penne; stir to combine. If using FROZEN vegetables, add them now as well.
Cover and cook for 5 minutes
If using FRESH veggies, add vegetables, cover again and cook for about 10 minutes, until pasta is al dente.
Give it a quick stir, add salt and pepper if needed, and top with some grated parmesan.
