A delightful fusion of spicy, creamy, and savory flavors, these Bacon-Wrapped Jalapeño Poppers are the perfect appetizer for any gathering. Inspired by American bar snacks, this dish beautifully balances the heat of jalapeños with the richness of cream cheese and the smokiness of bacon.

Instructions
Preheat your oven to 400°F (200°C) and prepare a baking sheet by lining it with parchment paper.
Slice each jalapeño in half lengthwise and use a small spoon to scrape out the seeds and white ribs for a milder heat. For extra spice, leave some seeds inside the pepper halves.
12 small jalapeño peppers
In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, paprika, black pepper, and salt. Mix well until smooth.
8 oz cream cheese, 1 cup shredded cheddar cheese, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp paprika, 1/2 tsp black pepper, 1 pinch salt
Stuff each jalapeño half generously with the cream cheese mixture. Ensure the filling is evenly distributed within each pepper half.
12 small jalapeño peppers, 8 oz cream cheese, 1 cup shredded cheddar cheese
Wrap each stuffed jalapeño half with a half-slice of bacon, starting at one end and spiralling to the other. Place seam-side down on the baking sheet. Secure with a toothpick if the bacon unrolls.
12 slices bacon
Arrange the bacon-wrapped jalapeños on the prepared baking sheet, spacing them evenly apart.
Bake in the preheated oven for 18-20 minutes, or until the bacon is crispy and the jalapeños are tender. Keep an eye out for the bacon turning a golden-brown color, emitting a rich, smoky aroma.
Remove from the oven and let cool on the baking sheet for 3–5 minutes before serving — the cheese filling will be molten and can cause burns. If using toothpicks, remind guests before serving.

Notes
Storage: Keep leftover poppers in an airtight container in the fridge for up to 3 days. Reheat in the oven or air fryer at 375°F / 190°C for 5–7 minutes until the bacon re-crisps — avoid the microwave as it makes the bacon rubbery.Make-Ahead: Assemble poppers fully (stuffed and wrapped) up to 24 hours ahead. Refrigerate unbaked on the sheet pan covered with plastic wrap. Add 2–3 extra minutes to the bake time since they'll go in cold.Freezing: Freeze baked poppers flat on a tray, then transfer to a freezer bag for up to 6 weeks. Thaw in the fridge overnight and reheat in the oven. Note that the cream cheese filling texture softens slightly after freezing.Substitutions: Swap regular bacon for turkey bacon for a lighter version, or use goat cheese in place of cream cheese for a tangier filling. Replace sharp cheddar with pepper jack for a double hit of heat.Pro Tip: Wrap the bacon snugly and place each popper seam-side down on the baking sheet — this holds the bacon in place without toothpicks and promotes even crisping.Heat Adjustment: Scrape out all seeds and ribs for mild poppers. Leave some seeds inside the pepper halves for medium heat. For maximum spice, leave the ribs intact and add a pinch of cayenne to the cheese filling.
