2mediumeggplantscut into bite-sized pieces
5clovesgarlicminced
2tablespoonssoy sauce
1tablespoonfish sauce
1tablespoonoyster sauce
1tablespoonbrown sugar
1cupfresh basil leaves
Garnish
1handfulred chilisliced, optional for garnish
Instructions
Heat 1 tablespoon of the vegetable oil in a large pan or wok over medium-high heat until shimmering. Add the beef slices, stir-frying for 3-4 minutes or until they begin to brown slightly. Remove the beef from the pan and set aside.
Add the remaining tablespoon of vegetable oil to the same pan. Toss in the eggplant pieces and sauté for 5-6 minutes, or until they turn golden brown and are tender. Stir constantly to ensure even cooking.
Add the minced garlic to the pan with the eggplant. Sauté for an additional minute until fragrant, but be careful not to burn the garlic.
Return the beef to the pan. Pour in the soy sauce, fish sauce, oyster sauce, and sprinkle the brown sugar evenly over the mix. Stir-fry everything for another 3-4 minutes, until the beef is just cooked through and the flavors meld together.
Finally, add the fresh basil leaves, tossing everything gently until the basil just begins to wilt. Remove from heat immediately to maintain the basil's bright color and aroma.
