Instructions
Preheat your oven to 400°F (205°C). Place a rack in the center of the oven.
In a large skillet, melt the butter over medium heat. Add the onion, garlic, carrots, and celery. Sauté for 6–8 minutes or until vegetables are softened and fragrant.
Stir in the flour and cook for 1–2 minutes to form a roux. Slowly whisk in the chicken broth, ensuring a lump-free mixture. Cook until thickened, about 4–5 minutes.
Add heavy cream, chicken, peas, salt, and pepper. Simmer for an additional 3 minutes, stirring well. Remove from heat and let cool slightly.
Roll out one pie dough round into a 9-inch pie dish and press gently to line the base. Trim excess edges. Spoon in the cooled filling evenly.
Cover with the second pie crust, sealing the edges by crimping with a fork or fingers. Cut 3–4 small slits in the center for steam to escape. Brush the top with beaten egg.
