Cowboy Caviar, often known as Texas Caviar, is a vibrant, flavor-packed salad or dip that brings together the bright flavors of fresh vegetables with hearty beans and a touch of zesty citrus. Inspired by Southwestern cuisine, it’s a staple at potlucks and backyard gatherings. Originally created in the 1940s by Helen Corbitt in Texas, this dish has grown in popularity thanks to its freshness, versatility, and healthful ingredients. Perfect as a standalone salad, chip dip, or taco topping, Cowboy Caviar elevates humble ingredients into a taste sensation.
In a large mixing bowl, combine the black beans, black-eyed peas, corn, cherry tomatoes, diced bell peppers, red onion, and cilantro. Gently toss to distribute evenly.
Prepare the dressing by whisking together the olive oil, red wine vinegar, lime juice, cumin, salt, and pepper in a small bowl or jar. Whisk until emulsified and well blended.
Pour the dressing over the bean and vegetable mixture. Toss gently to coat all ingredients evenly. If using avocado, add it last to avoid mashing and gently fold it in.
Let the cowboy caviar sit for at least 15–30 minutes in the refrigerator before serving, allowing the flavors to meld. It can be made several hours in advance for even more depth of flavor.
