If you love Italian food, you will absolutely love this chicken Lombardy recipe. It's a simple Italian dish that will satisfy your cravings for a savoury and tasty meal.
Preheat the oven to 450°F / 230°C (210°C fan-forced).
Melt 2 tablespoons of butter in a large skillet over medium-high heat. Sauté the mushrooms for 3 to 5 minutes, stirring constantly.
Remove the mushrooms and sauté the prosciutto until slightly golden and starting to crisp. Remove and set aside.
Slice each chicken breast in half horizontally to create 2 thin cutlets. Place each cutlet between two sheets of plastic wrap and pound to an even ½-inch (1.25cm) thickness using a meat mallet or rolling pin. Dredge each piece in flour, shaking off the excess, and season both sides with salt and pepper. Heat cooking oil and melt the remaining 2 tablespoons of butter in the skillet over medium heat. Cook the chicken in batches, about 3 to 4 minutes per side, until golden brown and cooked through (internal temperature of 165°F / 74°C). Transfer the chicken to a 9x13 inch (33x23cm) baking dish, leaving all the drippings in the skillet. Arrange the sautéed mushrooms over the chicken and set aside.
In the skillet, add the chicken stock and dry sherry wine and bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Season the sauce with salt and pepper to taste.
Pour the sauce all over the chicken. Top with prosciutto, then Parmesan and shredded mozzarella cheese. Sprinkle chopped green onions over the top. Bake at 450°F / 230°C for 12 to 14 minutes, or until the cheese is melted, bubbling, and golden brown on top. Let rest for 5 minutes before serving.
