1cupwhite onionfinely chopped
3tablespoonsfresh dillfinely chopped
3tablespoonswhite vinegarpreferably Czech or Eastern European-style
4tablespoonsneutral oilsuch as sunflower or grapeseed
1teaspoonsea salt
½teaspoonblack pepperfreshly ground
1teaspoonsugaroptional, balances the vinegar if desired
Instructions
Bring a large pot of salted water to a boil. Add the whole, unpeeled potatoes and cook for 20–25 minutes, or until fork tender. Don’t overcook—potatoes should hold their shape.
Drain potatoes and allow them to cool for 10 minutes. Peel while still warm for better flavor absorption, then slice into 1/4-inch thick rounds or chunks, depending on your desired texture.
In a large mixing bowl, combine the sliced potatoes with chopped onion and fresh dill. Gently toss to mix without breaking the potatoes.
In a small bowl, whisk together white vinegar, oil, salt, pepper, and sugar (if using) until emulsified.
Pour dressing over the warm potato mixture and gently fold until potatoes are fully coated. Let sit at room temperature or refrigerated for at least 30 minutes to allow flavors to meld.

Notes
For a tangier version, increase vinegar by 1 tablespoon.
If you’re short on fresh dill, substitute with 1 tablespoon dried dill—but fresh is strongly preferred for aromatic freshness.
For a creamier variation, stir in 1/4 cup sour cream or Greek yogurt.
Pairs beautifully with schnitzel, grilled sausage, or roast pork.
