Instructions
Preheat your oven to 375°F / 190°C (170°C fan-forced). Line a large rimmed sheet pan with foil for easy cleanup and spray lightly with cooking spray.
Cut the eggplant in half lengthways and score the flesh in a crosshatch pattern. Place the eggplant halves cut-side down on the sheet pan along with the whole red bell pepper, onion quarters, and the whole head of garlic with the top sliced off. Spray the vegetables lightly with cooking spray. Roast for 45 minutes or until the eggplant is completely soft when pressed, the pepper skin is blistered and blackened in spots, and the garlic cloves are golden and squeezable.
Allow the roasted vegetables to cool for 15 minutes until easy to handle. Peel and deseed the red pepper. Scoop the eggplant flesh from the skin and discard the skin. Squeeze the softened garlic cloves from their papery skins. Place the eggplant flesh, pepper, onion, and garlic into a food chopper or food processor.
Pulse 8–10 times until the mixture is chunky but cohesive — you want visible pieces of pepper and eggplant, not a smooth purée.
Transfer to a mixing bowl and stir in 1 tablespoon of extra virgin olive oil, ½ teaspoon liquid smoke, ½ teaspoon cumin, 1 teaspoon sumac, and salt and pepper to taste. Cover and refrigerate for at least 2 hours or preferably overnight to allow the flavours to meld.
