Ingredients

2 oz white rum use a high-quality Caribbean white rum for best results
1 oz pineapple juice fresh pressed if possible to preserve natural sweetness
1 oz passion fruit puree use 100% puree for deeper flavor. Brands like Funkin or Monin work great.
0.5 oz lime juice freshly squeezed
0.25 oz grenadine for a sunkissed layered effect
1 cup crushed ice enough to shake and fill glass

Instructions

Fill a cocktail shaker about halfway with crushed ice.
Pour in 2 oz of white rum, 1 oz pineapple juice, 1 oz passion fruit puree, and 0.5 oz lime juice.
Shake vigorously for 15 seconds until the outside of the shaker frosts slightly and ingredients are well chilled.
Strain into a chilled highball glass filled with fresh crushed ice.
Slowly pour 0.25 oz grenadine down the side of the glass for a beautiful layered ‘sunset’ effect. Do not stir.

Notes

Swap white rum for coconut rum for a creamier, tropical flair.
Passion fruit syrup can be substituted if puree isn’t available, but use half the amount and balance sweetness accordingly.
To make a mocktail version, omit the rum and boost pineapple and lime juices to compensate.
Use pebble ice if available; it maintains chill and texture better than cubed ice.
