Instructions
In a mixing bowl, combine the ground beef, egg, salt, and pepper. Mix gently with your hands until just combined, being careful not to over-mix which could toughen the meat.
Form the meat mixture into 4 equal-sized patties, slightly larger in diameter than your buns to account for shrinkage during cooking.
Heat butter in a skillet over medium heat. Add the sliced onions and cook slowly, stirring occasionally, until the onions are deep golden brown, approximately 15 minutes.
Preheat a grill or stovetop grill pan over medium-high heat to about 180°C (350°F). Place the burger patties on the grill and cook for about 4 minutes on each side or until your preferred doneness is achieved.
During the last minute of cooking, place one slice of gruyère cheese on each patty and allow it to melt.
Spread the truffle mayonnaise on the bottom half of the toasted brioche buns. Layer a handful of fresh arugula, then the burger patty topped with cheese, the caramelized onions, and finally the top half of the bun.
Serve immediately, perhaps with a side of crispy potato wedges or a fresh green salad for a balanced meal.
