Grilled Asparagus Salad with Lemon Zest

Ingredients
- 1 bunch asparagus thick stalks preferred for grilling
- 2 tbsp olive oil extra virgin for best flavor
- 1 tsp sea salt flaky or kosher salt preferred
- ½ tsp freshly ground black pepper
- 1 medium lemon zest from one fresh lemon
- 1 tbsp lemon juice freshly squeezed
- ¼ cup parmesan cheese shaved
- ¼ cup toasted almonds roughly chopped
- 1 tbsp fresh parsley finely chopped
Instructions
- Trim the woody ends of the asparagus spears. Drizzle with 1 tablespoon of olive oil, then season with sea salt and black pepper.
- Preheat a grill pan or outdoor grill to medium-high heat. Once hot, place the asparagus on the grill in a single layer.
- Grill the asparagus for 3-4 minutes on each side or until tender and slightly charred. Remove from heat and allow to cool slightly.
- Arrange the grilled asparagus on a serving platter. Drizzle with the remaining 1 tablespoon of olive oil and fresh lemon juice.
- Sprinkle the dish with lemon zest, shaved Parmesan cheese, toasted almonds, and parsley for a burst of flavor and texture.
- Serve immediately while warm or at room temperature.
Notes
