Instructions
In a large soup pot or Dutch oven, heat the olive oil over medium heat (about 350°F / 175°C). Add the diced onion and sauté for 4–5 minutes, stirring often, until translucent and slightly golden.
Add the minced garlic, chopped carrots, and celery. Cook for another 5–6 minutes until the vegetables begin to soften and release their aroma.
Stir in the cumin, paprika, sea salt, and black pepper. Toast the spices for 30 seconds to unlock their essential oils.
Add the rinsed brown lentils and pour in the vegetable broth. Stir well, increase heat, and bring to a gentle boil.
Once boiling, reduce heat to low and cover partially. Simmer gently for 35–40 minutes, or until the lentils are soft but not mushy. Stir occasionally.
Turn off the heat. Stir in the lemon juice and adjust seasoning with more salt or lemon if desired.
Ladle into bowls and garnish with finely chopped parsley before serving.
