Instructions
Heat a large pot over medium-high heat and add a splash of olive oil.
Sear the cubed pork shoulder until browned on all sides, about 5-7 minutes.
Add the diced onion and minced garlic to the pot, cooking until the onions turn translucent and fragrant.
Sprinkle the paprika over the mixture, stirring constantly to avoid burning. Allow the spices to bloom for about 1 minute.
Pour in the chicken broth and deglaze the pan, scraping any browned bits off the bottom.
Add the chopped cabbage, reduce the heat to low, and let the soup simmer gently for 1.5 hours, or until the pork is tender.
Finish the soup with a tablespoon of apple cider vinegar, and season with salt and pepper to taste.
