Instructions
Bring a medium saucepan of salted water to a boil over high heat. Add the diced potatoes and cook for 8-10 minutes until just tender — a knife should slide in with slight resistance. Drain in a colander, then spread the potatoes in a single layer on a sheet pan. Allow to cool completely at room temperature, about 20 minutes. Do not combine warm potatoes with the dressing.
