Instructions
Preheat the oven to 350°F / 175°C (180°C fan-forced). In a medium heavy-bottomed saucepan, combine the cornstarch and 1/2 cup sugar. Gradually whisk in milk until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil.

Remove from heat. Whisk a few tablespoons of the hot mixture into the egg yolks to temper them, then stir the tempered yolks back into the saucepan, one at a time, ensuring each is fully incorporated before adding the next. Add lemon juice and zest; whisk until smooth.

In a separate bowl, beat egg whites with salt and cream of tartar until soft peaks form. Gradually add 1/4 cup sugar, beating until stiff but not dry peaks form.

Gently fold the whipped egg whites into the warm lemon custard in three additions using a silicone spatula. Fold until no white streaks remain, being careful not to deflate the mixture. Pour the filling into the prepared graham cracker crust and smooth the top.
