Instructions
Add 2 oz (60ml) passion fruit pulp, 1 oz (30ml) gin, ½ oz (15ml) simple syrup, and ½ oz (15ml) fresh lime juice to a cocktail shaker filled with ice.
2 oz passion fruit pulp, 1 oz gin, 1/2 oz simple syrup, 1/2 oz fresh lime juice, 1 1/2 cups ice
Shake well until the mixture is chilled and slightly frothy, about 15 seconds. Look for a firm cold exterior on the shaker as a cue.
Strain the mixture into a chilled highball glass filled with fresh ice.
1 1/2 cups ice
Top with 4 oz (120ml) chilled club soda. Gently stir once or twice with a bar spoon to combine — over-stirring will flatten the fizz.
4 oz club soda
Garnish with a slice of passion fruit and a sprig of fresh mint for a vibrant presentation.

Notes
Storage: The finished drink cannot be stored — club soda goes flat within minutes. However, you can pre-mix the base (passion fruit pulp, gin, simple syrup, and lime juice) in a sealed jar and refrigerate for up to 24 hours. Add club soda per glass at serving time.Make-Ahead for Groups: Scale the base recipe up in a pitcher and keep it cold in the fridge. Shake individual portions with ice and top with fresh club soda when ready to serve.Substitutions: Swap gin for vodka (cleaner, lets passion fruit dominate), white rum (adds sweetness), or omit alcohol entirely and add an extra ounce of club soda for a mocktail version.Sweetness Adjustment: Taste the base after shaking — passion fruit tartness varies widely. Add simple syrup in ¼ oz increments if needed.Pro Tip: Shake hard for a full 15 seconds until the outside of the shaker feels uncomfortably cold. This chills the drink fast and breaks up thick passion fruit pulp so it integrates smoothly instead of clumping.
