The Pearl Diver cocktail is a tropical delight that conjures up the balmy breezes of the Caribbean with every sip. Originally crafted by the legendary tiki master, Donn Beach, this drink is a modern tribute to his genius. Known for its velvety texture and exotic blend of spices and fruit, the Pearl Diver captivates with its rich history and flavorful adventure.
1½ozgold rum45ml, preferably a medium-bodied aged variety
½ozdark rum15ml, with caramel and molasses notes
½ozlime juice15ml, freshly squeezed
½ozorange juice15ml, freshly squeezed
½ozDonn's Gardenia Mix15ml, see step 1 for preparation
¼ozfalernum7.5ml
7ozcrushed icefor shaking and serving
Instructions
Prepare Donn's Gardenia Mix: In a small saucepan over low heat, combine 2 parts honey with 1 part unsalted butter. Add a pinch of ground allspice and ½ teaspoon of vanilla extract. Stir continuously until the butter is fully melted and the mixture is glossy and uniform — about 2-3 minutes. Let it cool slightly before measuring. (This makes enough for several drinks; store the rest in the fridge.)
½ oz Donn's Gardenia Mix
In a shaker, combine the gold rum, dark rum, lime juice, orange juice, Donn's Gardenia Mix, and falernum.
1½ oz gold rum, ½ oz dark rum, ½ oz lime juice, ½ oz orange juice, ½ oz Donn's Gardenia Mix, ¼ oz falernum
Fill the shaker with crushed ice and shake vigorously for a minimum of 20 seconds until the mixture is frothy and chilled.

Strain the contents into a chilled coupe glass or a tiki mug filled with fresh crushed ice.
