Instructions
Melt the butter in a large pot or Dutch oven over medium heat. Add the sliced leeks and cook, stirring occasionally, for 7 to 8 minutes until softened and translucent. Do not let them brown.
Add the cauliflower florets, cubed potatoes, broth (or vegetable stock), and ½ teaspoon salt. Stir to combine and bring to a boil over medium-high heat.
Reduce the heat to medium-low, partially cover, and simmer for 20 to 25 minutes until the potatoes and cauliflower are completely fork-tender.
