Place the pork in a roasting pan, cover it with foil, and roast for 4–5 hours until the internal temperature reaches 95°C / 203°F and the meat pulls apart easily with a fork.
3.3 lb pork shoulder
When the pork has about 1 hour of cook time remaining, increase the oven temperature to 200°C (400°F) for the sweet potatoes. Alternatively, if you have two oven racks, remove the pork to rest tented in foil and increase the heat for the potatoes.
Prick each sweet potato several times with a fork. Place them on a baking sheet, drizzle with olive oil, and sprinkle with sea salt. Roast for 45–60 minutes until soft.
