1teaspoonPaprikasmoked for depth of flavor
1pinchsalt to taste
1pinchblack pepperfreshly ground
⅓cupfresh parsleychopped for garnish
Instructions
Heat the olive oil in a large skillet over medium heat. Add the onion and sauté until it becomes translucent and aromatic, about 5 minutes.
Add the minced garlic and continue cooking for an additional minute, stirring continuously to prevent burning.
Increase the heat to medium-high and add the pork mince. Break it apart with a wooden spoon and cook until browned, about 7 minutes. Season with salt, pepper, paprika, and thyme as it cooks to build layers of flavor.
Once the pork is cooked, remove it from the skillet and set aside. In the same skillet, add a dash more olive oil if needed, then the diced potatoes.
Cook the potatoes, stirring occasionally, for about 15 minutes or until tender and golden brown on the outside. Return the pork mix to the skillet, stir to combine, and let all flavors meld for another 5 minutes.
Taste and adjust seasoning if necessary. Sprinkle over freshly chopped parsley just before serving.

Notes
For an enhanced flavor, let the cooked mixture sit for a few minutes before serving, allowing the potatoes to soak up the rich pork juices.
