This soy ginger baked salmon pairs a savoury-sweet marinade of soy sauce, fresh ginger, garlic, and honey with oven-baked fillets that caramelise beautifully. Instructions
Grate the ginger and garlic into a medium mixing bowl. Add the honey, lemon juice, toasted sesame oil, and soy sauce. Whisk until the honey is fully dissolved and the marinade is evenly combined.
Place the salmon fillets skin-side down in a 9x13 inch (23x33 cm) baking dish or any oven-safe dish large enough to hold both fillets in a single layer. Using a sharp knife, score the flesh side of each fillet with 3–4 shallow diagonal cuts about ¼ inch (6 mm) deep. Pour the marinade over the salmon, spooning it into the score marks.
Cover the dish tightly with plastic wrap and refrigerate for at least 2 hours and up to 8 hours.
Remove the salmon from the fridge and let it sit on the counter for 20–30 minutes to take the chill off.
While the salmon rests, preheat the oven to 375°F / 190°C (170°C fan-forced).
Place the baking dish on the centre rack and bake for 12–15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 145°F / 63°C. The marinade should be bubbling and slightly caramelised at the edges.
Spoon any remaining pan juices over the salmon and serve immediately over steamed white rice, quinoa, or your favourite grain. Garnish with sliced spring onions or sesame seeds if desired.
