1poundsmoked sausagekielbasa or Slovakian-style, sliced into 1/4-inch rounds
1tablespoonduck fator substitute with unsalted butter or lard
1mediumyellow onionfinely sliced
2clovesgarlicminced
1teaspooncaraway seedslightly crushed
¼teaspoonfreshly ground black pepper
2tablespoonsapple cider vinegarraw, unfiltered if available

Instructions
In a large skillet over medium heat, add the duck fat and sliced onions. Sauté for 5–7 minutes, stirring occasionally until softened and golden, releasing a rich aroma.
Add the sliced smoked sausage to the onions and sauté for 6–8 minutes, or until the sausage begins to render its fat and edges turn golden brown.
Stir in the minced garlic and crushed caraway seeds and cook for another 1–2 minutes until fragrant.
Add the sauerkraut and black pepper to the skillet; toss well to combine with the sausage mixture. Cook for 6–7 minutes, allowing the sauerkraut to absorb the pan flavors.
Deglaze with the apple cider vinegar, scraping the skillet's bottom to lift fond. Stir in the julienned apple, if using, and cook for 2–3 minutes to retain crispness.
Remove from heat, adjust salt if needed (you may not need any depending on the saltiness of sauerkraut), and transfer to a bowl or serve warm directly from the skillet.
Garnish with freshly chopped parsley just before serving.
